Double Peanut Butter Chocolate Chip Bars

I felt like making bar cookies today and instead of the standard chocolate chip cookie bars I decided to make my base with peanut butter cookies.
And what better recipe to use than a tried and true amazing Chewy Peanut Butter base cookie recipe with a few added touches to make them over to top delicious.

Ice Cream Sandwiches

I decided to try a new way to eat my ice cream. Well, not technically new to the world, but definitely new to my kitchen.

Jumbo Peanut Butter Cookies

Have you ever seen such a giant cookie? Lol
These are my hubby's favorite cookies ever!
Not only are they a delicious peanut butter cookie, they are the size of a small frisbee! haha
I made these to use in my Ice Cream Sandwiches and realize that I used the same recipe as my Chewy Peanut Butter Cookies but I figure why not have the recipe with the exact directions for making the jumbo size too.

Individual Chocolate Chip Pizookie
I have made Oreo Cookie Pizookies in them and now I have made Individual Chocolate Chip Pizookies. Just wait until the summer fruit comes in and then the cobblers will start!

Individual Oreo Pizookie
My daughter absolutely LOVES the Oreo Cookie Pizookie at BJ's restaurant.
So I thought why not try and make them at home.
Much more fun and you can have them any time of the day or night :) A plus in my book!

Banana Oatmeal Cookies
I've said it before and I'll say it again, I love banana bread!
But once in awhile I need a change up to use up all the over ripe bananas in the house.
Last week I decided to try making banana cookies, ya know something I could eat for breakfast on the go maybe, but I still wanted the banana bread flavor.
These cookies taste just like banana bread; and just like the coconut I added to the last one, the oatmeal is a huge plus as an addition to these cookies.
They are like eating little pillows of banana bread, Mmm mmm.

Vanilla Sugar Cookies

I have been making these cookies for years. This was a recipe I found when I was a teenager and have made small improvements to it over the years.
I used to make these Frosted Sugar Cookies all the time and decided I really like them with just large sugar crystals instead.
So I revamped the recipe again (not a thing wrong with the original!) and turned them into an addiction!
I have made at least 5 batches of these in the last couple of weeks and knew I had to share them with you.

Oatmeal Raspberry Bars
Do you ever have one of those days where you really want something sweet to eat but don't know what to make?
I have those days several times a week, lol. Especially when I'm looking for new recipes for the blog.
So while I was looking in the cupboard the other day trying to come up with something that wasn't the same old cookie or cake recipe, I spied a few bags of Betty Crocker Cookie Mixes that I had bought over the holidays and hadn't used yet.
I immediately knew I wanted to make some kind of bar recipe with the bag of oatmeal cookie mix and raspberry jam which happens to be my favorite!

Ranger Cookies
I love heirloom recipes that are handed down from generation to generation.
This is a cookie recipe that I got from my mom that came from her grandma (my Great Grandmother) who I can remember going and visiting when I was really, really young. I'm talking 3 or 4 maybe 5.
My Great Grandmother Martin lived in Fresno on a farm when my mom was growing up and she used to go with her sister during the summer months to visit. Mom says she was a great cook and has several of her recipes. This is one of my favorites.
I only remember her in her late years living across the street from my Grandmother in a convalescent home and visiting her. She was the tiniest little lady I've ever seen and always had a smile for us.

Spritz Cookies
Classic Spritz Cookies are the quintessential Christmas cookie to me.
I remember the old copper cookie press with a twist handle our grandmothers used and then the newer silver/metal ones with the gun like grip and squeeze handle our mothers used. All the way to the newest kind today which is most likely made of plastic.
These cookie presses come with several different shapes to use and the best Spritz cookie recipe is right on the box.

Gingerdoodles

The name alone brings a smile to my face :)
These are my new all time favorite cookies and I got the idea from my friend Veronica over at MorningNooNight who posted some delicious looking Snickersnaps on my Facebook page a few weeks ago. I'm always looking for new and inventive ways to make cookies so I knew I had to try this type of cookie.
I already had a great Ginger (Molasses Crinkles) Cookie and Snickerdoodle recipe so I used mine and renamed the cookie Gingerdoodles!

Tropical Pineapple Coconut Bars

Do you like all things tropical? I sure do, especially the whole pineapple coconut combination.
It might very well be my favorite combination so far!
Today's recipe is one I have been making for probably more than 10 years.
These bars are one my Mother-in-law found in some cookbook in my kitchen years ago and made them because as she always says "I grew up having dessert after every meal", lol, and she does love her baked goods.
I will apologize in advance to the cookbook [owner] they were found in because I can't really remember who's they are, lol. I collected those Pillsbury ones they keep by the check stand in the grocery store for YEARS so that's most likely where this recipe came from.
