I felt like making bar cookies today and instead of the standard chocolate chip cookie bars I decided to make my base with peanut butter cookies.
And what better recipe to use than a tried and true amazing Chewy Peanut Butter base cookie recipe with a few added touches to make them over to top delicious.
So the next time you decide to make cookies, try these bars instead and you'll see just how easy and delicious they are.
I also love the one pan and done instead of continually scooping cookie dough onto a baking sheet :)
Perfect right out of the oven while they are still warm with an ice cold glass of milk! Or coffee, or tea. I'll let you decide what works best ;)
Here's what you need:
1/2 cup butter, at room temperature
1/2 cup butter flavored Crisco
1 cup creamy peanut butter, I use Skippy for baking
1 cup sugar
1 cup brown sugar
2 large eggs at room temperature
2-1/2 cups all-purpose flour
1 tsp. baking soda
1 cup Reece's peanut butter chips (like chocolate chips, not cups)
2 cups milk chocolate chips
Preheat oven to 350 degrees and line a jelly roll pan (17 x 12) with parchment paper and set aside.
In the bowl of a stand mixer beat the butter and sugars until smooth, about 2 minutes.
Add the peanut butter and mix well.
Add the eggs and mix well.
Add the dry ingredients and mix until just combined.
Add the peanut butter chips and chocolate chips and mix in by hand.
Pour the mixture onto the parchment lined baking sheet and spread out evenly with clean hands.
Bake for 22-27 minutes or until just turning golden on edges. Do NOT over bake.
Using a bench scraper or a knife cut into squares.
I cut mine into about 36 squares but you could easily get 48 smaller ones.
Nothing better than peanut butter and chocolate :)
