Rosemary Roasted Potatoes with Garlic Aioli

You KNOW how much I LOVE my potatoes, right?

I LOVE Baked Potatoes, Mashed Potatoes, Twice Baked PotatoesRoasted Red PotatesScalloped PotatoesRed Potatoes with Bell Peppers and Onions (perfect for breakfast) and just about any other kind in between.

So I am always trying out new creations with potatoes and my newest favorite are these Rosemary Roasted Potatoes with Garlic Aioli sauce.  Oh boy are they Scrumptious!

They have a crispy herby outside and creamy inside and when dipped in the Garlic Aioli sauce they are A-MAZ-ING!  

Here's what you need:

1 - 28 oz. bag Honey Gold baby Yukon potatoes or fingerling potatoes, quartered lengthwise
3-4 Tbs. canola, olive, or vegetable oil
1-2 Tbs. Rosemary Herb seasoning (I use Pampered Chef)
1/2 tsp. salt
1/2 tsp. fresh ground pepper

Garlic Aioli
1/2 cup Best Foods mayonnaise
1-2 Tbs. Dijon mustard
1/2 tsp. granulated garlic or 1 fresh clove grated
salt & pepper to taste

Preheat oven to 425 degrees.

Place a couple tablespoons of oil on a large baking sheet and place the potatoes on top.

Sprinkle with remaining oil and seasoning and toss to completely coat the potatoes (I use my clean hands for this step)
Bake for 45 minutes or until fork tender, turning halfway through the cooking time.

Serve with Garlic Aioli

Mix mayonnaise, Dijon, garlic, salt & pepper.  Taste and adjust seasoning if needed. Keep in the refrigerator until ready to use.
Mmm mmm, my new favorite way to eat my taters!

Pantry Granola

Granola is one of those foods that has taken me several years to really come to love.

I used to think it was only for "Health nuts" lol but I actually really, really love it too and even though I'm not a health nut it is one of the healthier things I love to make and eat.

And I LOVE my Cranberry Nut Granola but am also always looking for new and exciting recipes to try for new flavors.

I also have a slight (wink, wink) addiction to cookbooks.

I have bought both of MOMables founder Laura Fuentes's cookbooks here on Amazon and can't wait to try all the recipes.

Pumpkin Craisin Bagels

With Fall in the air you know we're in for an avalanche of pumpkin recipes.

There's just something about pumpkin flavored foods that make it feel like it really is Fall, even if you live where it's still been in the 90's like me!

Beings as I'm a lover of pumpkin I too have been trying out new recipes for the last week or so and have several I'll be posting over the next few weeks.

Cinnamon Raisin Bagels

I decided to try my hand at making homemade bagels a while ago because I was buying them fresh every few days for my family and everything tastes better when homemade, right?

Well they turned out pretty good and I've been making them ever since.

Homemade bread making seems intimidating but it really only takes patience and time.

It isn't any harder than baking cooking, you just need to make sure when you start that you have available the amount of time the whole recipe calls for.

Monkey Bread

Have you ever tasted Monkey Bread? And by that I mean the real stuff not the one made with canned biscuits.

This is seriously one of the easiest and most delicious recipes ever!

I always thought Monkey Bread would take forever; making the dough and putting it together, but with a little foresight and a bag of Rhodes frozen dinner rolls you can have this whipped up in a couple of hours.
