Thousand Island Dressing
Do you have a favorite salad dressing?
Mine is usually just Good Seasons Italian dressing which I've been making for years, but every once in awhile I make a homemade Thousand Island Dressing and it brings me back to my childhood when my mom used to make it for us and then it becomes my favorite for a few weeks too.
This is a really simple recipe and will liven up your everyday salads with a little flair.

Homemade Butterscotch Pudding
If you haven't tried making homemade pudding before, drop whatever you're doing and run to the kitchen and make some right now!
Homemade pudding is super simple to make and has the most luxurious texture and amazing flavor you'll ever taste.
I have made lemon, coconut, chocolate, and now butterscotch pudding in the last few weeks and I'll never go bake to the boxed kind again. It is perfect for pies, trifles, poke cakes, or just in a bowl.
I challenge you to make a batch and tell me it isn't better than what you get in the store.

Chicken Fajitas
I make a lot of Mexican food around here and one of my favorites is Chicken Fajitas.
I have always used the same method the same seasoning and they were fine with everyone.
Then one day while I was making some Perfectly Grilled Chicken to serve on salads I decided to cut some up and put it in a tortilla and boy oh boy was it the best tasting fajita I've ever made!
I will let you know that the Grill Rub I use has some raw sugar in it so it lends a sweet and smoky flavor to these fajitas.
With Cinco de Mayo right around the corner, isn't it time to try out something new?

Mini Quiche Bites
With Spring in full bloom around here I'm breaking out my recipe book and testing old and new brunch type recipes for the upcoming get togethers.
One of my all time favorites to serve at a brunch or get together is Mini Quiche Bites.
They are the perfect bite of pie crust, egg, cheese, and veggie and the perfect way to get all of those ingredients into your kiddos without them knowing.
These are super tasty, full of flavor, and everybody loves them.
These quiche bites are very versatile because you can add or subtract any of the ingredients you do or don't like and add your favorites too.

Chocolate Pudding
Have you ever had homemade chocolate pudding?
And I don't mean from the box but actually from scratch, pudding?
This has got to be one of the easiest but most rewarding desserts out there.
It was super simple to make, once I got the ratios correct, and is creamer and richer than any box mix around.
Do you have a few extra minutes in your day? It only takes about 15 minutes then in the fridge to chill. What could be simpler?

Lemon Meringue Pie
While on my pie making kick this past week I made my first ever Lemon Meringue Pie.
I have always wanted to try making meringue and was surprised at how easy it really is to make.
I also found out just how easy it is to make pudding/custard from scratch too.
I know most people probably use boxed pudding mix for pies but in the past week I have made several types of pudding/custard for pies and it really is super simple to make from scratch.
I also think it makes a much richer creamier tasting pie than those from boxed puddings.
Here is the cookbook I purchased from Amazon along with my Southern Pie Cookbook ~ Classic Southern Desserts which is where this delectable pie comes from.
