Ice Cream Sandwiches

Do you eat ice cream in the winter?

We do and it's just as delicious and refreshing as in the summer.

I decided to try a new way to eat my ice cream.  Well, not technically new to the world, but definitely new to my kitchen.

I made a few different kinds with different cookies and they were all amazing.

I'm sure you'll have a favorite too.

Jumbo Peanut Butter Cookies

Have you ever seen such a giant cookie?  Lol

These are my hubby's favorite cookies ever!

Not only are they a delicious peanut butter cookie, they are the size of a small frisbee! haha

I made these to use in my Ice Cream Sandwiches and realize that I used the same recipe as my Chewy Peanut Butter Cookies but I figure why not have the recipe with the exact directions for making the jumbo size too.

Homemade Flour Tortilla Chips

You know those chips that you get at certain restaurants that everyone fights over?

You know, they're the ones that they only throw in 3 or 4 per batch with all the others.

The ones that are crispy and flaky, and delicious?

Ya those ones.

Well they are also super easy to make at home.

Corned Beef Hash with a Poached Egg

One of my hubby's favorite things to eat is breakfast.

He's one of those people who will order it over other meals if it's on the menu, no matter the time of day.

Me?  I'm more of a lunch person unless I'm really in the mood, then I either cook or we go out for breakfast.

So the other night I made a Corned Beef for dinner with the intention of making the hubby's favorite breakfast food the next day for lunch.

Lucky Charm Bars

Most people love rice crispy treats......Not me.

I think there is just something off about the flavor and always have.

But I have always made them for my family and friends and they all LOVE them.

So I thought if you don't like rice crispy why not try a different cereal and make them instead.

Plus, my son and grandsons love the Lucky Charm bars that I used to be able to get at Target.

You know the saying, necessity is the mother of invention?  Well this was one of those moments where I thought I can make those just as tasty and they will be homemade which is always a plus.
