Here's what you need:
for a 7 x 11 dish ( Serves 4-6)
1 Lb. ground chuck or beef ( I use an 85/15 for more flavor)
3 Tbs. yellow onion, minced
6 crescent rolls
1 cup Colby Jack cheese, divided, pre-shredded is fine
1/4 cup ketchup
2 tsp. mustard
1/2 - 2/3 of a 2 Lb. bag of tater tots, frozen is fine
For a 9 x 13 baking dish
(serves 8-10 ) follow the instructions for the 7 x 11 using the amounts for the 9 x 13

1/4-1/3 cup yellow onion, minced
1 tube crescent rolls
1-1/2 cup Colby Jack cheese, divided, pre-shredded is fine
1/2 cup ketchup
1 Tbs. mustard
2 Lbs. bag of tater tots, frozen is fine
Preheat oven to 350 degrees. Spray a baking dish with cooking spray and arrange the crescent rolls to completely cover the bottom (sideways for 7 x 11, long ways for 9 x 13) pressing the seams to seal, set aside.
In a large skillet brown the ground beef with the onions until the meat is no longer pink.
Next add the ketchup, mustard and 3/4 of the cheese (leaving the rest for the topping) and stir to completely combine.
Evenly pour the meat mixture over the crescent rolls and top evenly with the tater tots.
Bake for 30 minutes. Then sprinkle remaining cheese over the top of the tater tots and continue baking for an additional 7 - 10 minutes or until the cheese is melted.

This was a super easy, super tasty dinner that will now be added to my weeknight round-up.
7 x 11 serves 4-6 or more depending on how big you cut the pieces

I love making tater tot casserole. There's a pan of leftovers sitting my fridge right now actually. Never thought of doing the crescent rolls. That sounds super yummy. Thanks for the idea!
