Sweet Potato Casserole

Do you still need a showstopper of a side dish for your Thanksgiving table?  Boy do I have the dish for you...

Here is an amazingly easy and scrumptious Sweet Potato Casserole that will have your guests asking for the recipe.

Here's what you need:

2-3 large sweet potatoes
2 eggs, at room temperature, slightly beaten
3 Tbs. butter, unsalted, melted
1/2 cup brown sugar
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. ginger
1/8 tsp. nutmeg
a few grinds of the pepper mill

Topping
1/2 cup brown sugar
1/3 cup flour
1/3 cup butter, unsalted, melted
1 cup pecans, chopped

Preheat oven to 400 degrees.

Wash the sweet potatoes and pierce with a knife or fork a few times.  Place on a parchment covered (you'll thank me later because of the sticky stuff they ooze) baking sheet and bake for 1 - 1-1/2 hours, or until soft like a baked potato.
 
After potatoes are done, cool a few minutes then peel off the skins.  I usually peel carefully down one side and scoop out the inside into a bowl and mash until smooth.
 
Add the eggs, butter, brown sugar, salt, cinnamon, ginger, nutmeg and pepper.  Mix until smooth then pour into a 8 x 8 or 11 x 7 baking dish pre-sprayed with baking spray.
 
In another bowl mix the topping and sprinkle over the top of the sweet potato puree.
 
Bake for 40 - 50 minutes or until topping is completely cooked and lightly browned.
 
This is the best side dish of the holiday season.  One of these days I'm going to put it in a crust and call it a pie :)

Serves 1 - 8 x 8 or 11 x 7
