Breakfast Fried Rice Bowl

Everyone needs a few no fail easy breakfasts in their repertoire.

Lately we've become very big on breakfast which is great because it just so happens to be the most important meal of the day too.

I have always said to the kids "you wouldn't get in your car and drive it without gas, so why don't you put fuel (breakfast) in your body when you're getting ready for a full day.

Most days we're all about cereal or peanut butter toast but I've been on a kick lately to make what I like to call Breakfast Fried Rice bowl with a Poached Egg on top.

It is filling and easy to make and everyone likes it.

I had this back in January when we were in Hawaii and fell in love with the idea of  "put an egg on it" as people say.  And I LOVE poached eggs and so does my family so this was a no brainer for us.

Crock Pot Breakfast Casserole

This is the perfect breakfast for early morning risers or a lazy weekend meal.

I love my crock pot and have been recipe testing for a few weeks now and this one is a keeper.

This would be perfect for a brunch get together or even the upcoming holidays.

Corned Beef Hash with a Poached Egg

One of my hubby's favorite things to eat is breakfast.

He's one of those people who will order it over other meals if it's on the menu, no matter the time of day.

Me?  I'm more of a lunch person unless I'm really in the mood, then I either cook or we go out for breakfast.

So the other night I made a Corned Beef for dinner with the intention of making the hubby's favorite breakfast food the next day for lunch.

Mini Quiche Bites

With Spring in full bloom around here I'm breaking out my recipe book and testing old and new brunch type recipes for the upcoming get togethers.

One of my all time favorites to serve at a brunch or get together is Mini Quiche Bites.

They are the perfect bite of pie crust, egg, cheese, and veggie and the perfect way to get all of those ingredients into your kiddos without them knowing.

These are super tasty, full of flavor, and everybody loves them.

These quiche bites are very versatile because you can add or subtract any of the ingredients you do or don't like and add your favorites too.

Toad in a Hole

Who remembers these?

I couldn't believe the other day when I asked my hubby about them, that he had never heard of them.

I don't remember my mom ever making these for breakfast but I do remember hearing about them.

I decided I wanted something quick but still filling for breakfast a few days ago so I thought why not?

Egg Salad Croissant Sandwich with Bacon

Egg Salad is one of my hubby's favorite sandwiches and last week I kicked it up a notch with some bacon and a croissant.  Mmmm mmm.

This is a super simple way to change up the daily lunch scene at your house and I find that most people love egg salad, even little kids.

Perfectly Hard Boiled Eggs

Today's post isn't a fancy dessert or a five course dinner; it's about the things I sometimes take for granted that people know how to do.  Some of the basics my mom taught me when I was growing up.

Like how to make rice cooked in a pan on the stove not in a fancy rice cooker.  And I still make rice on the stove to this day.  It's super easy!

Another easy thing to make is hard boiled eggs.  I've seen these made all kinds of ways; latest is baked in the oven, who knew you could do that.

Quiche Cups (crust-less)

I have been trying to come up with easy and nutritious breakfast foods to put in the hands of my family before they all head out in different directions every morning.

I also want something I can warm up and send with them instead of a granola bar on their way out the door.

I usually only cook Breakfast Casseroles, Quiche's, Breakfast Burritos, etc. on the weekends because I need the time to prep it, cook it, and serve it.

Breakfast Egg Sandwich

Oops!  I am re-posting this because I accidentally deleted it as I was posting a new picture. So here is an excellent choice for breakfast and is part of the "What we eat for breakfast around here" series.
My 16 year old can easily devour two of these breakfast sandwiches in one sitting!

Breakfast Burritos

"What we eat for breakfast around here"

Here is the next entry in the "What we eat for breakfast around here" posts.

My kids and I Love, Love , Love breakfast burritos, the Hubs not so much, so I usually end up making some sort of meat/potato combo and the eggs separate so everyone gets their choice of how they would like to eat their's.

My friend Lupe introduced me to Spam and Potatoes Burritos years ago and they were a hit around here so I've been making them ever since.  Now before you all go "EWWW" about the Spam, have you ever tried it?

Grandma's Spanish Tortilla

If you knew my Grandma Genevieve you probably had her Spanish Tortilla.  I remember whenever we had a family get together she would bring it and it would be devoured by all.  I can remember her making it when I was young and if she didn't have ham (which I think was in the original recipe) she would cut up a couple of hot dogs and throw them in.  This is a very forgiving recipe and I have modified it over the years.  I have been making this recipe since I can remember and have converted it to a breakfast or brunch item and serve it hot.  It is still wonderful cold or at room temperature, which is how I always remember it being served.
Here's what you need:

10 eggs
1 large russet potato, peeled and sliced
1/2 cup 1/2 & 1/2
1-1/2 tsp. granulated garlic
1/4 tsp. onion powder
1 tsp. dried parsley
1-1/2 tsp. salt
1/2 tsp. pepper
8 oz. diced Hillshire Farm Beef Smoked Sausage,(or cubed ham, or ground sausage.  I have used both)
3 Tbl. canola or vegetable oil
1 - 10" Calphalon Frittata pan set or a 10" skillet and a large plate for flipping

In a large bowl beat the eggs and 1/2 & 1/2 until completely incorporated.  Add the garlic, onion powder, 1/2  tsp. salt and 1/4 tsp. pepper and mix well.  Set aside.

Heat oil in a 10" skillet or a 10" Frittata pan (the deep side) on med-hi.

Peel and halve the potato then slice the potato into 1/8" slices then halve each piece again.  Dice the beef sausage into 1/4" pieces and place the potatoes and sausage into the skillet and cook for about 10 minutes or until the potatoes are mostly soft and the sausage is starting to brown.

Remove the pan from the stove and pour the potatoes and sausage into the egg mixture then transfer the whole thing right back to the pan.  (Don't ask me why that's just the way Grandma used to do it and if it ain't broke don't go fixin it.) Reduce the heat to medium.

Once the Tortilla is in the pan start going around the sides with a rubber spatula and gently pull the egg mixture away from the sides so more liquid pours under the cooked part.  This is so that the egg mixture cooks faster than if you had to wait for it to cook from the outside in.Tilt the pan a little while doing this step.

When the Tortilla is almost all the way set in the middle and there isn't too much runny egg on top; about 7 - 10 minutes into cooking, heat the top of the Frittata pan set on med-hi, or get a larger than 10" plate to do the flipping with.  When the second pan is hot, about 1 minute, place the second pan on top and lock it in, If using a plate, place it on top of the pan and get two hot pads for flipping.

Close the pan set and OVER THE SINK, flip the Tortilla over.  If using a plate, OVER THE SINK AND VERY CAREFULLY so that the plate doesn't slip, and sorta fast, holding the plate on top of the pan tightly with two hot pads flip the whole thing over onto the plate; watching out for where the handle will end up.

If using a plate, slide the Tortilla back into the same pan pushing gently with a rubber spatula as you go so all the loose potatoes and sausage end up underneath.  Go around the Tortilla with the spatula and push the sides in and under so it smooths out the edges.

Cook another 7 minutes on low to med-low.  Remove to a plate and serve with salsa, sour cream, avocado, etc.

Serve hot, warm or cold.  Yummy either way.

Serves 6 - 8

Enjoy!

Cheesy Ham and Veggie Quiche

Real men do eat quiche!  My husband loves quiche so when we are burnt out on eggs, pancakes, waffles or breakfast burritos I usually make a quiche.
