Egg Salad Croissant Sandwich with Bacon

Egg Salad is one of my hubby's favorite sandwiches and last week I kicked it up a notch with some bacon and a croissant.  Mmmm mmm.

This is a super simple way to change up the daily lunch scene at your house and I find that most people love egg salad, even little kids.

Here's what you need:

6 hard boiled eggs, cold, try my perfectly hard boiled egg recipe
1/4 cup mayonnaise
2 tsp. Dijon
1/2 tsp. salt
a few grinds of fresh pepper
juice of 1/2 a lemon
6 slices bacon, cooked crispy
3 croissants

Preheat oven to 400 degrees.  Bake croissants for 5 minutes or until crispy. Set aside.
In a medium bowl place all the eggs and chop them up into very small pieces.  I use a potato masher or two knives to do this.
 
Add the rest of the ingredients and mix well.
 
Slice the croissant in half and place a scoop of egg salad on one side and spread out.
 
Add some slices of bacon and put the top back on the croissant.
 
Cut in half and serve.
Delicious alternative to regular old sandwiches!
