Mud Pie for One

A little while back I posted my number one favorite ice cream pie for one.

Here is another family favorite on the ice cream pie list.  Especially for all you chocolate lovers out there.

This mud pie is full of chocolate cookies crumbs, hot fudge, and ice cream, all topped off with some fresh whipped cream ~ YUM!

Mud Pie is so easy to assemble and can be made a few days in advance or just a few hours in advance.

Perfect for those hot summer days we're still having or even the cool Fall nights that are coming up :)

Here's what you need:

12 Oreo cookies, crushed in blender or food processor
4 Tbs. butter, melted
Ice cream, mocha almond fudge, vanilla or a flavor of your choice
Hot Fudge Ice cream topping
whipped cream
jars - I used the 12.5 oz. Weck jars

Place cookies in a blender or food processor and turn into crumbs.  Pour into a bowl and add the melted butter.  Stir until it resembles wet sand.

Place 1/4 cup of the cookie crumb mixture into the bottom of a jar and press into the bottom until firm.
Drizzle one tablespoon of the hot fudge sauce over the crust.  Spread out as best you can.
Place a 1/2 inch (or so) layer of ice cream over the hot fudge. I find it's easier to get flat pieces with a fork.
Repeat with hot fudge sauce and then ice cream until the jar is full.  Sprinkle with a bit of the cookie crumbs on top.

Place lid on top and seal, or if using another type of container cover with plastic wrap and freeze for 3-4 hours.  These can be made a few days in advance too.
To serve - remove from freezer and top with real whipped cream.
Serves 1
