BBQ Beef Panini's

I make a lot of lunches at home for my hubby and kids during the week and I get tired of the same old sandwiches so I decided to try something new.

I made the most delicious BBQ Beef Panini's and they were so fast to put together. They have a wonderful barbecue flavor with lots of ooey gooey cheese added to the inside.

These Panini's were a total hit and I'll definitely be making them again.

What are some of the new and inventive ways you make lunch for a houseful?

Here's what you need:

1 pound ground beef, I use an 80/20 or 85/15 for the most flavor
1/2 -3/4 cup BBQ sauce, I use Sweet Baby Ray's Smoky Brown Sugar
1-1/2 cups shredded cheddar cheese, divided

In a medium skillet brown the ground beef until no longer pink.
 
Drain off any fat.  Add the BBQ sauce and cheese and stir until combined.
 
Heat the tortilla for a few seconds to make them pliable then place a scoop of meat mixture (approx 1/3-1/2 cup depending on the size of the tortilla) and some shredded cheese in the very center leaving at least 1-1/2 inches on the edge for folding.
 
Start by folding in the two sides then taking the side closest to you fold it over the meat mixture and pulling slightly towards you to keep it snug roll away from you until completely closed.
 

This was easy with 10 inch and 8 inch tortillas for smaller hands.
Place on preheated Panini maker or in a hot skillet and grill for a couple of minutes on each side.
 
Slice in half and serve.
These were so delicious and ooey gooey cheesy goodness!  

Serves several depending on the size of the tortilla at least 4-6 adults and kids
