Okay, so I could call these Homemade Cheese Its but these aren't as perfectly formed or as chemically colored as a Cheese It, so I just call them Cheesy Snack Crackers.
Plus, I'm so going to try this recipe with Pepper Jack Cheese over the weekend because I'm sure it will be a hit! You need these in your life! Go try them now! Well, maybe tomorrow would be okay, if you promise :)

Here's what you need:
4 cups cheddar cheese, grated
5 Tbs. butter, unsalted at room temperature
1 tsp. kosher salt
1 cup flour, all purpose
3 - 5 Tbs. ice cold water
In the bowl of a stand mixer mix the butter, cheese, and salt until well combined.
Add the flour and mix well, it will crumbly and dry.
Add enough ice water to get a dough like consistency and until it completely sticks together. I used about 4 Tbs.
Place dough in plastic wrap and chill for 1 hour.
Preheat oven to 375 degrees.
Remove dough from fridge and cut in half. On parchment or a clean surface, roll dough out until it is 1/8" thick approximately.
Using a sharp knife or a pizza cutter, like I do, cut strips 1 - 1-1/2 inches thick one way then the other to make squares.
Place on a parchment lined baking sheet and bake for 13 - 15 minutes. They are better when they are a little on the brown side because they are crunchier.
Tasty, yummy Cheese Crackers
Serves - a lot

I just made these... Let me just say WOW! I used half cheddar and half pepper jack, they are so good. The only thing I will change is next time I will divide my dough into 4 separate batches instead of 2. With 2 my edge crackers are crisp and delicious, but my center crackers are more like little bread squares (but still delicious!) I think I had too many on the pan too close together! Thanks for the recipe, I wish I hadn't waited 3 months to make them!
