Our favorite way is for breakfast, although they are a great addition to any dinner too.
I like mine as a breakfast sandwich, while most of my family likes them with butter and jam.
Both ways are scrumptious. So you decide which way you like them best and let me know!
Here's what you need:
1 Buttermilk Biscuit
2 slices crispy bacon
1 fried or poached egg, scrambled works great too
a squirt of ketchup
shredded cheddar cheese
I bought these cute little egg molds (rings) and I've been dying to use them. I sprayed the rings with cooking spray, set them in a hot pan and cracked my eggs (one each) into them.
Cook for a few minutes (2-3) per side. I always place a lid on the pan to help the tops set up faster.
When the eggs look almost done on one side, take the rings off the eggs and flip. Continue cooking a couple more minutes until desired doneness. (You don't need to use the rings I just wanted to have fun with these and give them a try.)
You can also poach the eggs in simmering water for 3 minutes then drain before using.
Slice the biscuit in half and add desired condiment. I used ketchup. Place the egg on one side of the biscuit and start the layering process.
Breaking the bacon pieces, arrange to fit for maximum coverage :)
Add a good pinch of shredded cheddar cheese.
Top with second biscuit half and dig in!

Okay, can I just tell you that breakfast sandwiches are basically my favorite thing ever? Alright, maybe not EVER, but I've been guilty of eating something like this for breakfast AND dinner in the same day! Since I'm a vegetarian, I do it a little differently. I do an english muffin with an egg, a slice of veggie bacon, and a little cheese! Yum! I'm craving it now!! Thanks for sharing this!
