I have a great Fresh Homemade Salsa recipe that I usually keep on hand but he wanted Pico de Gallo.
So this is what I came up with. It was really good and I'll definitely make it again!
Here's what you need:
1-1/2 cups diced tomatoes, with the insides removed first
1 small white or yellow onion, diced
1 minced jalapeno, deveined and de-seeded
1-2 garlic cloves, grated on a microplane
1/4 cup cilantro, chopped
juice of 1 large lime
1 tsp. salt
Wash and dice up all the veggies and place in a bowl.
Mix well and place in a bowl.
Cover and refrigerate for at least 2 hours before using.
Enjoy with Mexican food or chips!
Serves 2-1/2 cups (approx)
