Cheesy Ham and Veggie Quiche

Real men do eat quiche!  My husband loves quiche so when we are burnt out on eggs, pancakes, waffles or breakfast burritos I usually make a quiche.
I made this last week when I had made a ham for dinner (I'll eventually post the recipe) and wanted to do something else besides sandwiches with the leftovers.  I like quiche because they are so versatile.  I use this same base in all mine and just change the meat, cheese, veggie combos.  Another great thing about quiche is that you can make it for any meal, not just breakfast.  I hope you like this as much as we do.

Here's what you need:

1 - 9" pie crust - recipe to follow
5 eggs, room temperature
3/4 cup half and half
1 cup ham, diced
1 cup Cheddar cheese
1/2 cup red bell pepper, finely diced
2 green onion, sliced
1 tsp. salt
1/2 tsp. pepper

Preheat oven to 375 degrees.  Wash and chop all ingredients and grate cheese.  In a large bowl beat eggs until they are combined. 
Mix in the rest of the ingredients and pour into prepared pie shell.
Bake for 50 - 60 minutes or until completely set.  A knife inserted into the center should come out clean and the very middle shouldn't be jiggly.
Yummy, yummy, yummy!

  2. I made this just about an hour ago! I didn't have half and half, so I did a mix of whole mix and heavy whipping cream (which makes half and half I think?). Instead of ham, I cooked bacon, removed the strips from the pan, cooked 1 boneless chicken breast cut into small pieces in the grease with a little bit of chopped up yellow onion until the onion was translucent. Once the onion was translucent, I added 1 can of rotel long enough to get it nice and hot, then I drained the entire mixture of liquid. I then put all the items (eggs, milk, cream, cheese, chicken/rotel/onion mixture, and crumbled bacon) into a bowl and mixed, then dumped into pie shell. I baked the same way this recipe says to bake and it is delicious! I love this recipe because I know I can mess around with it a million different ways and it still taste delicious. Thank you!
