Roasted Red Potatoes

I warned you didn't I?  About the potato addiction...  Well these are a family favorite that my dad made up several years ago and my brother and I have adapted the original recipe until we got what we thought was perfect.

Here's what you need:

5 Lbs. red potatoes, cubed into 1-1/2" cubes, approximately  10 - 12 potatoes, med size
2 packets of Good Seasoning Italian Dressing, just the dry mix
2 sleeves Ritz crackers, crushed
1 cup olive oil, plus more for moistness
1/2 cup rice wine vinegar
1-2 cup Parmesan cheese, freshly shredded


Preheat oven to 425 degrees.  Spray a sheet pan with cooking spray and set aside.

Place crackers into a zip top bag and crush with a rolling pin or whatever is handy (I used a jar of jam).
 
Wash, dry, and cube potatoes and place into a large bowl.   Add the cracker crumbs and dry dressing packets.  Pour in the oil and vinegar. Stir until well coated.
Pour onto a sprayed (with Pam) baking sheet and bake for 40 minutes then stir to turn the potatoes over. 

Continue baking until the potatoes are fork tender, about another 45 minutes.
 
Sprinkle with the grated Parmesan and put back into oven for a minute or two, just until the cheese is melted.

Serves - and this is too funny.....anywhere from 6 - 8 - 12 depending on if you have potato loving fiends like I do.
