Broccoli Cheddar Soup

Every once in a while I decide to do a recipe re-do.  I have revamped this recipe for Broccoli Cheddar Soup with a few new ingredients and a couple of new pictures.

A couple of days ago it finally started getting cooler here in Northern California and I for one am super happy about that because that means soup for me.

Last night I made this for dinner using my original Broccoli Cheddar Soup and making a few changes to it make it even more delicious.

Pasta e Fagioli Soup

If you know anything about me you know I LOVE soup.

I love soup in the Spring. I love soup in the Fall. I love soup in the Winter. And I even love soup in the middle of summer!

I love everything about soup.  The process of making it, the slow simmer of it on the stove.  The total comfort you get from a bowl and especially the warm delicious way it fills you up without giving you that overstuffed feeling.

I LOVE SOUP!

Do you love soup too?

I mean I REALLY love soup and order it even when it's 108 degrees outside in the middle of summer.

There is something very comforting to the body and soul when you eat a bowl of soup. It's like pulling up a warm and toasty blanket on a cold night.

So with my love of soup in the forefront of my mind, I'm always on the lookout for new and interesting recipes.

Wendy's Copycat Chili

Doesn't this potato just scream dinner to you?

I don't know about you but I will find any excuse to include potatoes in my daily consumption of food, including trying out new recipes.

I found this recipe over at The Slow Roasted Italian and knew I had to give it a try, especially after my Aunt already tried it and said it was fabulous.

I've never actually HAD Wendy's chili but I know this one is a winner even if I have nothing to compare it to.

This is a meal that can be cooked up in under an hour so it's perfect for weeknight meals.
