Apricot Dijon Pork Tenderloin

I have been making this dish for several years and it has become a family favorite.

I have the same sauce posted on an earlier recipe for Apricot Glazed Pork Roast and have just adjusted the amounts for these pork tenderloins.

I find that tenderloin is the best cut of meat for this recipe and they always turn out perfectly.

Melt in your Mouth Crock Pot BBQ Ribs

I'm finally back after several months off planning my daughters wedding, whew!

I have missed you guys and blogging so much lately and with the way technology changes with the wind it'll be a miracle if I can even remember how to write a post.

With only three of us living at home most days I decided it was time to get myself a new (smaller) crock pot.  And beings as I LOVE my All Clad 7qt. slow cooker I decided to try the All Clad 4 Qt. Slow Cooker for smaller meals.  Both are available at Williams Sonoma or Amazon.

Have you tried pulled pork yet?  I've made several versions of pulled pork but this one was by far my very favorite.  

Now some of you will think it's too sweet and some of you will think it's not spicy enough but I have other recipes for those flavors.  With this one I was going for a true Sweet Pulled Pork flavor.

Crock Pot Applesauce Pork Chops

The other day while on Pinterest I found this recipe from Frosted Bake Shop and adapted it slightly to make this delicious crock pot dinner for my family.  I was a little skeptical at first because of the ingredients but it was DELISH!  I hope you'll give it a try and let me know what you think.

Here's what you need:

4-6 Boneless pork chops
1/2 cup brown sugar
1/2 tsp. cinnamon
16 oz. can tomato sauce
1 cup applesauce
1/4 cup. apple cider vinegar

Salt and pepper each pork chop on both sides and place in the bottom of the crock pot.
 
Pour applesauce over the top of the pork chops.
Next mix the brown sugar and cinnamon in a small bowl then pour over the applesauce.
 
Pour the apple cider vinegar over the brown sugar mixture.
 
Next add the tomato sauce and stir a little to combine the sauce.
Cook on high for 4-5 hours or low for 8 hours.
Super easy and extremely tasty weeknight crock pot dinner.

Crock Pot Creamy Ranch Pork Loin

I am always trying to come up with more inventive and delicious recipes for my Crock Pot so that I can spend more time doing my housework (cough, cough) or computer work (more likely).   I have a few new recipes to share that turned out wonderful and I'm sure you'll enjoy making for your family's too.

Here's what you need:

2-1/2 pound Pork Loin Roast
2 cans cream of chicken soup
1 envelope of Ranch dressing mix
1 Crock Pot

Super easy directions:

In a bowl or measuring cup pour the cream of chicken soup and the ranch dressing mix and stir until fully incorporated.
 
Place pork loin in the crock pot and pour the soup mix over the top, turning it over to fully coat the roast.
 
Turn on to high and cook for 4-5 hours or on low for 7-8 hours.  Turn the meat over halfway through the cooking time.

I served mine with cooked egg noodles.
It was a hit with the whole family and was very tasty.  Almost like a Stroganoff type meal.

Serves 6

Teriyaki Pork Kabobs

We do a lot of barbecuing in the summer months.  I love Kabobs and so does my family.  I wanted to come up with a recipe using pork instead of the same ol' chicken or steak.  This one was a hit!  These Kabobs were so delicious with all the regular veggies I usually use but still a whole new flavor.  Give these a try and let me know what you think.  They are easy to prepare and super fast to cook.

Here's what you need:
3 large boneless pork chops, about 1-1/2 pounds total (I buy them from Costco and they are HUGE), cut into 1-1/2 inch cubes
2 large red bell peppers, any color is fine, cut into 1-1/2 inch cubes
1- 20 oz can pineapple chunks, with juice, or 1-2 cups fresh pineapple, cut into 1-1/2 inch cubes
2 yellow onions, cut into wedges about 1-1/2 - 2 inches
1 Lb button mushrooms, whole (small in size) or cut into halves or quarters
1 - 21 oz. jar of your favorite Teriyaki sauce, I use Trader Joe's Soyaki Teriyaki sauce
10 - 12 long skewers, pre-soaked in water for 1 hour

In a large bowl or dish place all the ingredients and pour the pineapple juice (if using canned) and the Teriyaki sauce over the ingredients.
 
 Mix well to coat everything.
 
Oh look, I forgot the onions, sigh.   Looks like I'm in for another toss and stir.
 
After everything is completely coated with Teriyaki sauce, cover with plastic wrap and place in refrigerator to marinate for at least 2 - 3 hours, up to 8 hours.  Stirring every 45 minutes to 1 hour.
  
To assemble, take pre-soaked skewers and push the ingredients onto the skewer in a pattern you like.  I always start and end with onion or bell pepper and get at least 5 pieces of meat per skewer.  You should get between 10 - 14 skewers.  I usually get about 12.  It all depends on the size of the veggies and chops you start with and how big or small you cut everything.

Preheat a barbecue to 350 - 375 degrees.  Place skewers on barbecue and cook with lid closed for 3-5 minutes per side (4 sides) or until cooked through. 

*Every type of meat has a different safe cooking temperature (doneness) so make sure you cook to the correct internal temperature (can be found online) for the meat you are using.
When done remove from barbecue and serve.  I serve my new rice pilaf recipe when making these Kabobs.

I made this for dinner the other night and it was a HUGE hit with everyone!  I even used the leftovers as sliders a few days later when the kids had friends over and I hadn't made enough for dinner, {gasp} I know right?

I also used a new FAVORITE product in this recipe that you HAVE to try out.

Michelle's Shredded Pork Tacos

Do you ever have one of those days where you can't decide what you really want to eat or cook?  Today was a day like that for me and I don't mean that I couldn't decide what to cook; I just couldn't decide on only one thing.  This is becoming like an addiction......someone please call for an intervention!

I don't know what you do on a rainy day, but I stay in the kitchen and cook and bake all day and today was a perfect example.

I went to the store early this morning and picked up a whole chicken and a pork shoulder, which I have in the freezer but are seriously still frozen, so I could cook both and have plenty of shredded meat on hand over the weekend and early next week for recipes.

Crock Pot Country Pork Ribs

Now that the weather is FINALLY getting cold here in California I busted out my crock pot.  My NEW crock pot that is.  I got an All-Clad fancy shmancy crock pot that has a coated insert that comes out and can be used right on the stove to sear in so you don't have to use more than one pan.  I have made several recipes in it lately (which I will be posting at a later date) and LOVE it, but this recipe was made previously so that's why the pictures shows a Rival crock pot.  So put this in your crock pot and snuggle up with a good book on a cold day and dinner will make itself.

Here's what you need:

3 Lbs. boneless country pork ribs
1 recipe Auntie Sharon's Ultimate BBQ Sauce -Here

 
Now pay attention to the direction cause I don't want to lose you here.

#1.  Get Crock pot out of the cupboard and dust off if needed. hehe
#2.  Mix all ingredients for Ultimate BBQ Sauce together and place in crock pot.
#3.  Put the boneless country pork ribs in crock pot and stir until covered with sauce.
#4.  Turn on to High and set for 6-8 hours.
#5.  Now leave the kitchen and let the machine do the work!

Best served with mashed potatoes, but then I would probably serve mashed potatoes with every meal if I could get away with it. 
Finished meal!  YUM.  It falls apart so have a large serving spoon handy. 

Psst...  This is another one of Justin's favorites.  I'm telling you that kids is going to get his own heading pretty soon!

Serves 6 - 8
