Swedish Christmas Cookies - Christmas Cookie Swap

Welcome to the 1st Annual Christmas Cookie Swap.  

This wasn't your traditional Christmas Cookie Swap because we didn't actually swap cookies.  We swapped cookie recipes!  Even better!  We were all given a fellow blogger or baker to swap a favorite cookie recipe with, then we hand wrote (haven't done that in a long while) and mailed our recipe.  When we received the recipe that was sent to us we baked and blogged about the cookie recipe we received.

I was so excited when I found out that I received my recipe for Swedish Christmas Cookies from Julie over at White Lights on Wednesday  because you all know from visiting her blog that she makes some pretty amazing food!

This recipe is one of Julie's Moms favorites and she makes these cookies for her every Christmas.  I'm honored to receive a treasured family recipe.  Thanks Julie :)

Here's what you need:

2-1/2 cups flour
2 tsp. ginger
1/4 tsp. salt
1 cup butter, unsalted, at room temperature
1 cup powdered sugar
1 egg, at room temperature
1 Tbs. vanilla extract
1 tsp. grated lemon zest
colored sanding sugars

Start with a beautifully handwritten recipe :)
In a bowl whisk the flour, ginger, and salt. Set aside
In a stand mixer or large bowl beat the butter and sugar until light and fluffy, about 3 minutes.  
Add the egg, vanilla, and lemon zest and mix until combined, scraping down the sides as you go.
Add the flour in two additions, mixing until completely combined.
Divide dough in half and roll each into a log in parchment or plastic wrap and chill for 2 hours.

Preheat oven to 325 degrees.

Cut each log in half again and roll in sanding sugar.
Cut each log into 1/4" slices and place on a parchment lined baking sheet.
Bake for 20 - 25 minutes.  Cool on baking sheets.

Serves - approximately 3 dozen
