BBQ Chicken Quesadillas

In the mood for BBQ Chicken in one form or another and also in the mood for a cheesy Quesadilla became the birth of the BBQ Chicken Quesadilla.  This is great served as an appetizer or as a meal.  These are crunchy on the outside, warm, cheesy, barbecue on the inside all wrapped in a handheld package.  These will make a great addition to your Super Bowl spread!

Here's what you need:
2  large (burrito size) flour tortillas
1-1/2 cups diced cooked chicken breast (I usually grill up a few in the week just to have on hand)
1 cup favorite BBQ sauce (I use the bold and spice from Trader Joe's)
2 Tbl. finely minced red onion
2 cups shredded Colby Jack cheese

Dice onion and chicken and place in a small bowl.  Add barbecue sauce and stir until well coated.

Heat a flat skillet or large pan on med-hi until hot.  Add one flour tortilla and sprinkle with 1/2 cup cheese, and half the chicken mixture.

Spread the chicken mixture out evenly over the tortilla and add another 1/2 cup cheese.

Top with remaining tortilla and cook 2 - 4 minutes per side to achieve a crispy brown exterior.

Cut into 4 or 8 pieces and serve by itself or with condiments of your choice.

This was Delicious!

Serves 2 - 4

Enjoy!
