Pecan Pie Bars

I have made these bars three times just since Thanksgiving!  Ya know, it's one of those recipes I've had for several years and totally forgot about.  So it just sat in my recipe basket getting lonely.  Then for Thanksgiving I decided to make these instead of a Pecan Pie and boy were they a hit!
Everyone asked to take some home that night and I have made them two more times since.  I love that these are bars and can be cut into pieces large enough for a dessert (like PIE) or just bit size pieces so each time I sneak into the kitchen during the day when company is over there is plenty to go around :)  Enjoy!

Here's what you need:

2-1/3 cups flour
2/3 cup sugar
3/4 cup butter, cold and cubed
1-1/2 cups light or dark corn syrup (I have only used light, but origianl recipes calls for dark)
4 eggs, large
1/2  cup brown sugar, packed
2 tsp. vanilla extract
1 tsp. salt
2-1/2 cups pecans, chopped

Pre heat oven to 350 degrees.  Line a 9 x 13 (lengthwise) with parchment paper and spray the whole inside of pan (including parchment) with baking spray and set aside.
In a medium bowl mix 2 cups of the flour with the white sugar.  Using a pastry blender (or your fingers) cut in the cubed butter until it resembles coarse crumbs.  
 
Dump mixture into the 9 x 13 and press firmly into the bottom of the dish and a little bit up the sides.  I used another piece of parchment on top to get a good start.
Bake for 20 -25 minutes, base should be lightly browned.

Meanwhile, in another bowl mix the eggs, corn syrup, brown sugar, remaining 1/3 cup flour, vanilla and salt until completely combined.  Chop the pecans and set aside.
 
When base is done cooking pour the filling over the base and sprinkle with the chopped pecans to evenly coat the top.
 
REDUCE OVEN TEMPERATURE TO 325 DEGREES
Did ya get that?  Because I sometimes don't read all the directions to the end, lol.
Place back in the oven and continue baking for an additional 40 - 50 minutes or until set in the center.
Cool completely (if you can wait that long) before serving.  I loosen the sides with a knife and then gently lift the whole pan of bars out using the parchment paper.  Cut and serve

    I wonder if you might have idea what I could substitute for the corn syrup,maybe I could try sugar free syrup?? and also will use splenda for sugar substitute.
    I'm printing this recipe and gonna give it a try,I'll let you know.
