Pumpkin Spice Cookies

You all know how I've been talking up the Fall cooking and baking but haven't been actually posting anything?  Well here is the first new recipe.

I was totally desperate the other night feeling like I'd let everyone down with all this talk and no pumpkin action.  So I just had to try a cheater cookie recipe that was knocking around in my head.  And guess what?  These cookies are super soft and fluffy and taste just like pumpkin bread!  Total hit!  Yea me :)

I chose not to frost these cookies but you could use a cream cheese frosting and they would be over the top yummy.

Here's what you need:

1- 15.25 oz. box yellow cake mix
3/4 cup solid pack pumpkin
2 eggs
1/3 cup oil
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ground ginger
1/8 tsp. ground cloves

Preheat oven to 350 degrees.  Line a baking sheet with parchment paper and set aside.

In a bowl mix all the ingredients until combined.
 
Using a medium cookie scoop place the cookie dough two inches apart on the lined baking sheet and bake for 10 minutes.  Allow to cool a couple of minutes on the baking sheet then remove to a cooling rack.

Take lots of pretty pictures with new Fall props :) These cookies taste just like Fall to me.
