Wendy's Copycat Chili

Doesn't this potato just scream dinner to you?

I don't know about you but I will find any excuse to include potatoes in my daily consumption of food, including trying out new recipes.

I found this recipe over at The Slow Roasted Italian and knew I had to give it a try, especially after my Aunt already tried it and said it was fabulous.

I've never actually HAD Wendy's chili but I know this one is a winner even if I have nothing to compare it to.

This is a meal that can be cooked up in under an hour so it's perfect for weeknight meals.

I made these chili stuffed potatoes for the Superbowl and it was a hit.

Here's what you need:
recipe adapted from The Slow Roasted Italian

1 pound ground beef, I use an 80/20 for more flavor
1 tsp. salt
1/2 tsp. ground black pepper
1 - 8 oz. can tomato sauce
1 - 15 oz. can pinto beans, drained and rinsed
1 - 15 oz. can kidney beans, drained and rinsed, I use the lower sodium beans
1 - 14.5 oz. can diced tomatoes
1 - 4 oz. can diced green chilies
1 tsp. onion powder
1 tsp. cumin
1 Tbs. chili powder
1/2 Tbs. paprika
pinch of red pepper flakes, to taste
1/2 cup water

Optional toppings and sides:
Baked potatoes
chips
shredded cheese
diced green, red, or white onion
sour cream

Heat a large Dutch oven or stockpot over medium high heat and brown the ground beef seasoned with salt and pepper.  Drain off any grease, if any, after beef is browned.
 
Add the seasonings and stir to coat.  Cook for 1-2 minutes.
 
Add the tomatoes, tomato sauce, beans, and green chilies and stir well.
 
Add the water and stir well.  Bring to a boil then reduce to a simmer and cover.  Cook anywhere from 30 minutes to 3 hours.  The longer you cook this chili the better and thicker it will get.
 
Serve with your favorite accompaniments.  Mine are baked potatoes, cheese, sour cream, and green onion :)
Serves 6  -  easily doubled to serve a crowd

After making this recipe several times I have refined it to how I like it and I have re-written the recipe for those of you who like a little more "chili" flavor in your chili, lol.
