Hot Cocoa Mix

When the cold weather hits, do you snuggle up with a cup of hot cocoa?

I do!  Especially at night when the lights are down and the house is quiet.  That's the best time for Hot Cocoa and a good book.

Here is a recipe I came up with for making homemade hot cocoa instead of that instant stuff.  This has a deep, rich flavor that all the chocoholics out there will love!


Here's what you need:

3-1/4 cups sugar
3/4 cup cocoa powder
1/2 tsp. espresso powder

In a bowl mix the sugar, cocoa powder and espresso powder until well mixed.
 
To make the hot cocoa place 1-1/2 cups milk in a pan and add 3-4 Tbs. of the hot cocoa mix.  
 
Whisk while heating over medium until the cocoa is the right temperature.
 
The color will change from dark brown to a light cocoa color and just before boiling it will be ready.
Pour into a mug and top with whipped cream and a sprinkle of the mix or cinnamon or even chocolate shavings.   Mmm mmm!

Store leftovers in an airtight container.

Serves approximately 4 cups of mix
