Peanut Butter Banana Chocolate Chip Muffins

I'm always trying to come up with new and inventive ways to make muffins. Plus I always need new ways to use up the bananas other than banana bread.

I could easily eat muffins for breakfast every day.  How about you?  Do you like muffins?

They're kinda like naked cupcakes, lol.

These are the latest ones I came up with.

Here's what you need:

1-1/2 cups flour
3/4 cup sugar
1 Tbs. baking powder
1/2 tsp. salt
1 cup mashed ripe bananas, about 2 medium
1/3 cup whole milk
1/2 cup peanut butter
3 Tbs. canola oil
1 egg
3/4 cup milk chocolate chips
3/4 cup peanut butter chips

Preheat oven to 350 degrees.  Line a muffin pan with paper liners and set aside.

In the bowl of a stand mixer place the sugar, peanut butter, egg, milk, oil, and mashed bananas.  Mix until completely combined.
 
Mix the flour, baking powder, and salt in a bowl and add it to the mixture.  
 
Mix until combined, scraping down the sides as you go.
Add the milk chocolate & peanut butter chips and stir to combine.
 
Fill muffin liners 3/4 full with batter and bake for 18-20 minutes.
 
Cool in pan 5 minutes then remove to a cooling rack to cool completely.
 
Serve warm or at room temperature. YUM ~ Deliciousness
