Root Beer Float Cupcakes

My hubby loves root beer and root beer floats so for his birthday this year I decided to try something new and make root beer float cupcakes.

It was one of those recipes that I can't believe actually worked out and the cupcakes really did taste like root beer floats!

I bought some of those flavored oils from the candy making / baking section of JoAnns or Michael's and one of the flavors was root beer.

I'm sure when I bought it I was thinking of making hard candy with it but I made cupcakes instead and they turned out A-MAZ-ING!

Don't ask me how it works but it really does.  You should try some today!

Here's what you need:

1 box vanilla cake mix
1 cup root beer, we only use A&W
3 large eggs, at room temperature
1/2 cup oil
2 ea. .125 fluid ounces root beer flavor oil
1 recipe for No Fail Buttercream Frosting
Straws for decoration

Preheat oven to 325 degrees for dark pans and 350 for silver pans.  Line a muffin pan with paper liners and set aside.

In the bowl of a stand mixer combine the cake mix, root beer, eggs, and oil.  Mix for 2 minutes on medium.
Add the two bottles of root beer flavoring and mix well.
 
Fill each paper liner 3/4 full with batter.
 
Bake for 18 minutes or until a toothpick inserted into the center comes out clean. Cool 5 minutes in pan then remove to cooling rack and cool completely.

Frost with your favorite frosting and decorate with a piece of straw (I used paper ones and cut them into 3 or 4 pieces each) so it looks like a drink.
 
Not only were these super cute for a birthday but they were delicious too!
