Peanut Butter & Jelly Donuts

I've been on a baked donut kick lately.  But that's okay because they're baked!  Right? (nod your head)

I found this amazing recipe for Chocolate Dipped Peanut Butter Donuts over at Crazy for Crust and decided that peanut butter donuts sounded great to me.  But being a "not totally crazy about chocolate person" I adapted Dorothy's recipe to fit what I was making and boy oh boy did the end result please the taste buds.

Not that I won't be making those Chocolate Dipped Peanut Butter Donuts real soon, because I will!

Now, what goes best with peanut butter, besides chocolate, of course?

You got it!  Jelly, Jam, Preserves.....No matter how you say it, it's all great with peanut butter.

I personally enjoy my Homemade Strawberry Jam with peanut butter.  It makes great sandwiches, is wonderful on top of biscuits, and now has a new home on top of my peanut butter donuts.

Now go make some of these yummy donuts for your family!

Here's what you need:

1/4 cup peanut butter, creamy, I use Skippy
1/4 cup brown sugar, packed
1/3 cup milk, room temperature
1 Tbs. canola or vegetable oil
1/2 tsp. vanilla
1 egg, I use extra large, at room temperature
1 cup flour
1 tsp. baking powder
1/4 tsp. salt
Jam or Jelly for glazing

Preheat oven to 350 degrees.  Spray a regular size donut pan with cooking spray and set aside.

Mix flour, baking powder, and salt in a bowl and set aside.

In a bowl beat the peanut butter and brown sugar until smooth.
Add milk, egg, oil, and vanilla.  Beat until smooth.
Add flour mixture and mix until completely combined, scraping down the sides as you go.
 
Spoon mixture into a zip top baggie and cut the tip off with scissors to make a small piping hole.
Pipe the donut dough into the prepared donut pan and bake for 10 minutes. The donut will spring back when pressed lightly with your finger when it is done baking.
After you remove the donuts from the oven turn them out onto a paper towel to cool.
 
Heat a couple Tablespoons of your favorite jam or jelly in a micro safe bowl to thin it slightly and drizzle on the donuts.
 
Serve with tall glasses of milk :)
Serves 6 regular size donuts
