Today I'm sharing some of my favorite cool weather recipes.
I know it's only been (or going to be) cool here for a couple of days then right back into the 90's but I'm taking advantage and making some of these delicious meals.
This morning I made a batch of these delicious Quiche Cups (crustless) and they are perfect for a grab and go in the morning. Get those kiddos on the road with a warm yummy breakfast on the way to school. Or send the honey to work with one in their hand to keep them full until lunch. You know they say breakfast is the most important meal of the day!
These Apple Fritters are another yummy treat for breakfast on any day!
I made this Chicken Enchilada Ring for lunch this week and it was the perfect addition to our chilly weather. This is also a great 40 minutes or less dinner for those busy weeknights.
Slow cooking is one of my favorite things in the fall and winter and these Italian Beef Dip Sandwiches are also great for those busy days when you need dinner to be cooking itself while you're chauffeuring the kiddos around to games, ballet, music, etc.
Here is an all time family favorite! Crock Pot Country Pork Ribs Just set and go in the morning. Come home to a wonderfully smelling dinner. Add some mashed potatoes and a vegetable and voila dinner is served.
And the last but certainly not least - another family favorite is this delicious Apricot Dijon Pork Tenderloin which is great served with my Roasted Red Potatoes.
