Chicken, Bacon, and Asparagus Pasta

If you love pasta dishes like we do you definitely need to try this one.

This is the perfect mix of delicious chicken, bacon and asparagus in a creamy sauce that is amazing and delicious.

This dish is pretty quick to put together and goes great with my Homemade French Bread.  The whole meal start to finish, including the bread making, only took me an hour!

I started with the bread and while it was rising I made the pasta dish and both were done at the same time.

Here's what you need:

1 - 1-1/2 pounds boneless, skinless thin cut chicken breasts
salt & pepper
1 Tbs. canola or vegetable oil
1 Tbs. butter
4 cloves garlic, minced
2 cups heavy cream, at room temperature
2 cups whole milk
1-1/2 cups Italian cheese, pre-grated
1/2 Lb bacon, diced and cooked crispy
1 bunch asparagus (about 1 pound) sliced into 1-1/2 inch pieces
1 pound fettuccine


In a small to medium skillet cook the diced bacon until crispy or as done as you like.  Remove from pan and set aside.
 
Heat a large skillet with oil and butter.  Season the chicken breasts with salt and pepper, add to the skillet and cook 5 minutes per side or until done. (I use thin cut)
Chicken needs to be 165 degrees inside to be done. Remove from pan and set aside. Do not drain the pan. After the chicken rests about 10 minutes cut into pieces about 1-1/2 inches long.
 
Add minced garlic to the pan you cooked the chicken in and stir for 15 seconds.
Add the cream and milk and stir.  Bring to a simmer and add the cheese. Cook until melted and thickened.  About 5 - 7 minutes. (sorry I forgot to take pictures) Salt and pepper as needed.

Boil water and cook the fettuccine until al dente adding the chopped asparagus for the last 3 minutes of cooking.  Drain and add to the sauce with the cut-up chicken then top with the bacon.
 
Serve with Homemade French Bread, YUM!

Serves 6 to 8 (with a little leftover for lunches)
