German Chocolate Layer Cake

As you all know from the past, I'm not much of a chocolate person but I do LOVE German Chocolate Cake.

Growing up it's the cake I remember my Mom making that I really loved.

Probably because of the coconut and pecans in the delicious frosting.

This is a super easy recipe to follow but looks really fancy when you serve this cake.

I always start with a box mix and add the ingredients I want to make it into the perfect cake. Because If I've said it once I've said it a million times "there's nothing wrong with boxed cake mixes".

So for your next family function or get together, YOU bring the dessert and everyone will fall in love with German Chocolate Cake.

Here's what you need:

Cake
1 chocolate fudge cake mix
1 can sweetened condensed milk
1/2 cup coconut oil, melted
1 cup whole milk
3 large eggs, at room temperature

Frosting
1-1/4 cups sugar
1-1/4 cups evaporated milk
10 Tbs. butter, at room temperature
3 egg yolks, at room temperature
1 Tbs. vanilla
2 cups coconut
1-1/2 cup pecans, chopped


Preheat the oven to 350 degrees and line two 8 or 9 inch pans with a parchment circle and spray with cooking spray.
Place all ingredients into the bowl of a stand mixer or a large bowl and mix on medium for 2 minutes.
 
Pour into the two pans evenly and bake for 30 - 35 minutes or until a toothpick inserted into the center comes out clean.  I usually start testing around 27 minutes.
Remove from oven and let cool in pan.

While the cake is cooling make the frosting.

In a pan stir together the sugar, evaporated milk, butter, and egg yolks.  Bring to a boil and reduce to a simmer. 
 
Simmer for 15 minutes.
Add the vanilla, coconut, and pecans and stir.  
Cook for one minute then remove from heat and cool.
Place one cake round on a cake plate and pour half the frosting in the middle and spread out to the edges.
 
Add second layer and repeat with frosting.
 
If it gets a little messy just scrape off the sides and place the frosting back on top. And if you REALLY love chocolate you can add some chocolate frosting around the outside edge.
Serve with a tall glass of ice cold milk or coffee :)
