I love pizza, don't you?
I mean I seriously love pizza!
I could probably eat pizza at least once a day for the rest of my life and be totally content. Just ask my family.
I like only a few kinds of pizza too. I usually order pepperoni, pineapple, and black olive but I like a good combination once in a while too.
My very favorite pizza to make at home is BBQ Chicken Pizza. And I sure do make a mean one.
One of these days I'm going to try and grill my pizza but for now I'll just cook it in the oven :)
Here's what you need:
1 pizza crust for a 15 inch pizza, homemade or store bought
2 cups cubed cooked chicken breast, boneless and skinless
18 oz. bottle of Kraft Honey BBQ sauce
2 Tbs. red onion, finely diced
1 cup Mozzarella cheese, finely shredded
1 cup Colby Jack cheese, finely shredded
1/3 cup Parmesan cheese
Pizza baking stone
Preheat oven to 525 degrees.
I pre cook my chicken earlier in the day with a little bit of granulated garlic, salt, and pepper until done.
Cube the chicken and place in a bowl. Add 1 cup of the BBQ sauce and mix well. Set aside.
Roll out your pizza dough onto the pizza stone and press the dough all the way to the edge.
Brush the rest of the BBQ sauce onto the pizza dough.
Layer the Mozzarella then the Colby Jack over the sauce.
Next, sprinkle on the Parmesan then the chicken, spreading it out to give the best coverage.
Lastly, sprinkle with the diced onions.
Bake for 15 - 18 minutes or until the crust is cooked, the cheese is melted and golden and you just can't stand the wait!
Slide onto a cutting board and let rest for a few minutes. I know, that's the hardest part! But if you don't the hot cheese will just slide all over the place while you're cutting the slices.
If you're lucky enough to have an Epicurean Pizza Cutter like me then rock away, otherwise a regular pizza cutter or chef knife do the trick just fine too!
