Grilled Corn on the Cob with Chipotle Chive Butter & SRS


Here we are again for the Surprise Recipe Swap hosted by Jutta over at Hungry Little Girl.  I've had a blast so far and really enjoy meeting all the wonderful bloggers and reading their blogs as well as trying some of their amazing recipes.

Desi has an awesome blog and I had a hard time trying to choose between all her wonderful recipes.  I was torn between Bacon Spinach Cheese Ball because um, Hello..  Bacon and cheese! Her Endive, Avocado, and Bacon Salad with Chipotle Ranch Dressing, and the one I decided on Grilled Corn with Chipotle Chive Butter and let me tell you, I'll definitely be making the salad soon!


Here's what you need:

1/2 cup butter, unsalted and at room temperature
2 Chipotle pepper's with a little of the Adobo sauce they come in, finely minced
2 Tbs. chives or green onions, minced

Corn on the Cob for the amount of people you are serving

To make the compound butter mix the butter and minced Chipotle pepper with the minced green onions until it is smooth and completely incorporated.
 
Tear off a piece of plastic wrap about 8 inches long and place the butter in the middle.  Roll it up into a log and store in the fridge for at least 1 hour before use to harden back up.
 
Serve on grilled or cooked corn on the cob.

To grill the corn on the cob, shuck the corn and clean off all the corn silk.  Place in tin foil and place on hot grill/BBQ and grill for 15-20 minutes.  You can also just pull the corn husk back, remove all the corn silk and cover back up with the husk.  Then place on the BBQ and grill for about 15-20 minutes or until done.

I did mine in the microwave because I was just eating this piece for lunch.  I cleaned it and wrapped it in a paper towel and microwaved it for 3 minutes and it was perfect :)

After the corn is cooked cut a few pieces of the Chipotle butter and slather on the corn.  
Oh my gosh am I in heaven with this butter!  

This was the best corn on the cob I've had and I LOVE corn on the cob!  Thanks Desi for such an amazing and simple way to enhance a veggie :)

  3. would frozen corn on the cob work in microwave to cook, I bought a bag of frozen corn from store this butter sounds so good, just wondering
