Do you ever have one of those days where you just want to combine some recipes and make new ones? Well I was getting tired of making the same old cookie recipes so today I did just that.
I combined my Peanut Butter Cookies with Oatmeal Cookies and Chocolate Chip Cookies and you know what? They were FANTASTIC! My new favorite cookie. You have to give these a try and let me know what you think. In fact you probably have all the ingredients in your cupboards so go make them right now.
Here's what you need:
1/2 cup butter, unsalted, at room temperature
1/2 cup shortening (I use butter flavor Crisco always)
1 cup creamy peanut butter
1 cup brown sugar
1 cup sugar
2 eggs, slightly beaten
1-1/2 cups flour, unbleached
1-1/2 cups oatmeal (I use quick cooking)
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla extract
1-1/2 cups milk chocolate chips, (semi sweet would be fine too)
Preheat oven to 375 degrees. Line a baking sheet with parchment or a Silpat and set aside.
In a bowl mix the flour, oatmeal, baking soda and salt and set aside.
In the bowl of a stand mixer or a large bowl beat butter, shortening, brown sugar and sugar until combined and light.
Add in the peanut butter and mix until completely combined.
Add the eggs and vanilla and mix well.
Add the flour/oatmeal mixture and mix until combined. Stir in the chocolate chips.
Using a medium to large metal scoop (about the size of a large walnut) place cookie dough about 2 inches apart on a parchment lined baking sheet and bake for 8 minutes. Turn the cookie sheet around and bake an additional 5-6 minutes. Cookies will be soft in the middle and brown on the bottom. Let cool on cookie sheet a couple of minutes then remove to cooling rack or paper towels.
The scoop I use produces a 3-1/4" - 3-1/2" cookie.
I suggest serving them slightly warm with a glass of milk, but you can eat them any way you want to.
