Honey Mustard Chicken Salad

I found this recipe a few weeks ago on Facebook from Cafe Delites and couldn't wait to try it out.

I made this for lunch and have made the marinade/dressing several times just for the delicious flavor to make wraps and sandwiches.

Here's what you need:

Marinade/Dressing:  I usually triple this recipe and store it in the fridge for several weeks

1/3 cup honey
3 Tbs. whole grain mustard
2 Tbs. Dijon mustard
4 Tbs. olive oil
1 - 2 cloves garlic, minced
1/2 tsp. salt
pepper to taste
2 to 3 Tbs. water to thin if needed

Salad

Romaine lettuce, chopped
red onion, sliced
cherry tomatoes, cut in half lengthwise
Pepper jack, cubed small
Cheddar, cubed small
bacon, cooked crispy and crumbled
apple, diced, I prefer either Pink lady or Honeycrisp
avocado, sliced
carrots, sliced thinly
marinated chicken breasts, grilled and sliced, 1 per person

Place all the marinade/dressing ingredients in a bowl and mix until combined. Set aside.
Place the chicken in a zip top bag and add some of the marinade, enough to coat all the chicken. 
 
Zip closed and place in a bowl (in case it leaks) and place in the fridge for 2 hours up to 1 day.  The longer you marinate the tastier it'll be.
Grill until done.  Let rest.
Place all salad ingredients in a large bowl and top with grilled chicken, veggies, and dressing.
This is an amazing tasting salad that can be enjoyed all year long.

The chicken is also delicious is a wrap or sandwich.
