Crock Pot Chicken Fajitas

Here is another one of those Tasty recipes I adapted to make a delicious and super easy dinner last night.

These are literally the easiest fajitas I've ever made, and so fast to throw together.

These delicious fajitas will definitely be going in my regular meal line up.

Here's what you need:

1-1/2 pounds boneless skinless chicken breasts, thin cut
1 - 2 yellow onions, sliced
1 - 2 bell peppers, red, yellow, or orange, sliced
2 Tbs. taco seasoning, I use Taco Bell
3 Tbs. Michelle's Grill Rub
Juice of one lime

Serve with:

flour tortillas
shredded lettuce
shredded cheese
sour cream
avocado
hot sauce

Slice the onions and bell peppers and set aside.
Layer half the bell peppers and half the onions in the bottom of the crock pot.
 
Place the chicken on top of the onions and sprinkle with the 1 Tablespoon of the taco seasoning then 1 Tablespoon of the grill rub.
 
Turn the chicken over and repeat with the spices.
Add the rest of the bell peppers and onions and sprinkle with remaining 1 Tablespoon of grill rub.
 
Slice the lime in half and squeeze the juice over the veggies.
Cover and cook on High for 4 hours.
After 3-1/2 hours take the chicken out and slice or cube, depending on how you want the pieces.
 
Put the chicken back into the crock pot and stir to completely coat.  Cook for the remaining time left out of the 4 hours. Look at all the sauce that is made with just the chicken, veggies, and juice of one lime :)
 
Remove from crock and serve with all the fixings.
