Macaroni Salad

Now that summer is here we sure are ready for all those classic summer picnic/BBQ foods, how about you?

Some of my favorite are my Old Fashioned Potato SaladRoasted Corn & Black Bean SaladLime Jello Ambrosia SaladSteak & Potato KabobsChipotle Marinated Steak, and my Margarita Chicken just to name a few.

Now being added to this delicious list is my Classic Macaroni Salad that took me several tries to get just right!

And believe me, you'll thank me for all the work I put into this one ;)

So fire up those grills,make this delicious Macaroni salad, and throw a backyard barbecue for your friends and family :)

Here's what you need:

1 pound Ditalini pasta
2 cups mayonnaise (Best Foods)
1/2 cup apple cider vinegar
2 cans 2.25 oz sliced olives
4 oz can or jar of pimentos
1 Tbs. sugar
1-1/2 tsp. salt
1/2 tsp. pepper
1/4 red onion, diced
1/2-3/4 cup pickle relish or diced bread and butter pickles

Boil the pasta in a well salted pot of water.  Drain and pour into a bowl.
 
Add the mayo and vinegar and mix well.  I start by mixing a few spoonfuls of mayo into the vinegar then add the rest.
 
Drain all wet items really well and add to the mixture and mix well.
 
Add the onions and mix well.
Add salt, sugar, and pepper to taste.
Cover with plastic wrap and chill for at least 8 hours or overnight.

You will most likely have to add more mayo after the salad has had sufficient time to chill overnight.

Serves a bunch
