Mocha Crazy Cake

While I was checking out Facebook a while back I found this recipe over at Sweet Little Bluebird blog for Chocolate Crazy Cake and adapted it slightly for a Mocha Cake.

What is Crazy Cake you ask?  It's a cake that was developed during the depression when some food items were scarce; like eggs, milk, and butter.  

This is a cake that is made without any eggs, milk, or butter.  This cake is dairy free; which is perfect for those of you with egg or dairy allergies.

From what I can remember from science class (many many moons ago) it's the reaction between the vinegar and baking soda that causes the cake to raise just like eggs do. {science lesson of the day}

It is also a one dish cake.  Mix, bake and serve all out of the baking dish.  Always a plus for everyone.

Here's what you need:

Cake:

1-1/2 cups flour
3 Tbs. cocoa powder
1 tsp. instant espresso powder
1 cup sugar
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vinegar, distilled white
1 tsp. vanilla
5 Tbs. canola oil
1 cup water

Frosting:

2 Tbs. butter, at room temperature
2 Tbs. cream cheese, at room temperature
2 cups powdered sugar
2 Tbs. cocoa powder
1 tsp. instant espresso powder
1 tsp. vanilla extract

Preheat oven to 350 degrees.

In a 8 x 8 baking dish pour the flour, cocoa powder, instant espresso powder, sugar, baking soda, and salt. Mix with a whisk until combined.
 
Make two small wells (about a Tablespoon size) and one large well (about a 1/2 cup size) in the mixture.
Fill the small ones with the vinegar in one and the vanilla in the other.  Pour the oil in the large one.
Pour the water over the whole top and mix until smooth.
 
I used a paper towel to clean up the edges.
Bake for 28-32 minutes.  Mine was done in just about 30 minutes.  Do not over bake.
Set aside to cool while you make the frosting.

Cream the butter and cream cheese in a bowl until completely smooth.
 
Add the powdered sugar, cocoa powder and instant espresso powder and starting on LOW beat until completely smooth.
 
 Frosting will be pretty thick.  Add the vanilla and beat until smooth and creamy.
 
Add the frosting to the top of the cake and frost with a spatula to the edges.
Slice and serve with a tall glass of your favorite beverage.
