Funfetti Cupcakes

Do you remember that commercial where the mom is in the kitchen making the rice crispy treats and everyone is in the family room asking how much longer it'll take?

You see her sitting there reading a book, lol, then she flicks some flour on her face, messes up her hair, and comes out bearing a tray of rice crispy treats like it took her hours to make?

Ya, that one.

These totally remind me of that commercial because of how easy they are to make too.

I mean really, how hard is it to make cupcakes anyway?  Not very

And everyone seems to love funfetti!  Especially the kiddos and friends :)

It amazes me how simple it is to spruce up a plain old cupcake with some sprinkles and frosting.

If I had just known to do this years ago I'd have been even more popular with my baking :)

So if you know someone who is having a birthday, celebrating a baby, having a bad day or just needs a sweet treat, whip up a batch of these funfetti cupcakes and you're sure to get smiles all around!

Here's what you need:

1 box vanilla cake mix
1 3.4 oz. instant vanilla pudding
1/2 cup canola or vegetable oil
1 cup milk
3 eggs
1 tsp. vanilla
1/2 cup sprinkles
1 recipe No Fail Buttercream
sprinkles for the top of the frosting

Preheat oven to 325 degrees for a dark cupcake pan and 350 for a light silver pan.

Line a cupcake pan with paper liners and set aside.

In the bowl of a stand mixer or medium mixing bowl  place all the ingredients except the sprinkles and mix for 2 - 3 minutes on medium until well blended and fluffy.  Scraping the sides as you go.
 
Add the sprinkles and mix well.
 
Fill each cupcake liner 2/3 full with batter.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Move the cupcakes to a cooling rack and cool completely.

When the cupcakes are cool make the buttercream and frost each with your choice of piped frosting or spread on frosting.  I usually pipe my frosting to make it easier to do all at once then if I want a smooth look I use an offset spatula and smooth out the frosting, which is what I did here.
 
Sprinkle with decorative sprinkles or regular sprinkles.
 
The inside is just a pretty as the outside and yummy too!

Serves 24 regular size cupcakes

  1. This cupcake looks wonderful !!
    You have no idea how much I'd like to bake such cupcakes. The problem is that the sprinkles that we have here melt while baking....
    So I'm jealous
