Cinnamon Sugar Pumpkin Muffins

I am all about Fall right now and all the yummy pumpkin recipes I can create and share.

I have been making quiet a few new yummies and I'm sharing them with you :)

I love a good pumpkin muffin in the morning and these are scrumptious.

I have 2 new recipes that are similar and depending on if you like cinnamon sugar or a streusel topping you can decide which ones to make.  I think they are both amazing.

Here's what you need:

3/4 cup butter, unsalted and at room temperature
1-1/2 cups sugar
3 eggs, at room temperature
2 tsp. baking powder
1 tsp. cream of tartar
1/2 tsp. salt
2 tsp. Pumpkin Pie Spice
2-1/2 cups flour, I use unbleached King Arthur flour for all my baking
1/2 cup solid pack pumpkin
1/2 cup milk, I use whole milk for baking for any is fine

Cinnamon Sugar topping
1/2 cup sugar
1 tsp. Pumpkin Pie Spice or cinnamon

Preheat oven to 350 degrees and line 2 - 12 cup muffin tins or 1 - 24 cup muffin tin (adore mine!) with paper liners and set aside.

In a small bowl mix the topping mixture and place a teaspoon in the bottom of each muffin liner.

In a bowl mix the flour, baking powder, cream of tartar, salt, and pumpkin pie spice. Set aside.
In another bowl or the bowl of a stand mixer, beat the butter and sugar until light and fluffy.  
Add the eggs and beat until incorporated.
Add the pumpkin and mix well. The mixture will separate, this is normal.
Alternate the flour and milk mixtures starting and ending with the flour.  Mix thoroughly after each addition.

Using an ice cream size scoop place one scoop in each muffin liner and place another teaspoon of topping mixture on top of each batter dollop.  You should get 20 muffins.
Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
There you have it!  Delicious Cinnamon Sugar Pumpkin Muffins.
Serve warm or at room temperature.  Yuuuuuuum!
