Jalapeño Popper Grilled Cheese

I love Jalapenos!  It's a pretty new love too.  I never used to eat them and now I can't get enough of these fiery little monsters.  I mostly stick to the jarred ones, but I add the fresh ones to some recipes I make too.

I came up with this sandwich one day while I was trying to decide on something different for lunch.

We eat a lot of sandwiches around here and I get tired of plain old turkey or ham day after day and I LOVE grilled cheese.

I also love spicy flavors.  So when I decided to make a Pepper Jack grilled cheese I thought of those tasty little poppers and thought "why not"?  So this recipe was born and boy oh boy is it delicious.

Here's what you need:

2 Large slices of sourdough, I use one of those round presliced ones
2 oz. cream cheese, at room temperature
1 Tbs. mayonnaise
1 /2 cup packed Pepper Jack cheese, grated
1 Tbs. (up to 2 Tbs.) minced jalapenos, jarred NOT FRESH
1 tsp. jalapeno juice, if needed to loosen the mixture
butter for bread

Preheat griddle on medium high for a few minutes.

In a bowl mix the mayo, cream cheese, and Pepper Jack cheese until completely combined.
 
Next add the diced jalapenos and mix well. Add a little bit of the juice from the jar if needed.
Spread the mixture on one slice of the sourdough and top with the other slice.
Spread one side with butter and place the butter side down on a hot griddle and butter the second side.
 
Cook for 1 - 3 minutes depending on how crispy and browned you like your sandwich. I like mine really crispy and dark brown.
Flip and cook on other side until golden and crispy, about another 1 - 3 minutes.
Move to cutting board and cool for a minute before slicing.  The ooey gooey cheese will be H.O.T!

Makes 1 - 2 sandwiches depending on the size of your bread and how full you make them.
