I love all things lemon and am always looking for something new and tasty to try.
Plus, I've been making a lot of chocolaty recipes and needed a change.
This recipe is almost embarrassingly easy to make.
They only take about few minutes to throw together and then it's just a waiting game for them to cool long enough to glaze, ha ha (the hardest part in my opinion)!
Here's what you need:
1/2 cup butter, unsalted and at room temperature
3/4 cup sugar
3/4 cup flour
1/4 tsp. salt
2 large eggs, at room temperature
2 Tbs. lemon zest
2 Tbs. lemon juice, freshly squeezed
Glaze:
1-1/2 cups powdered sugar
juice and zest of 2 lemons
Preheat oven to 350 degrees. Line an 8" square pan with parchment paper then spray with cooking spray and set aside.
In the bowl of a stand mixer or large bowl, mix the butter with the sugar, flour, and salt until combined. This is be dry looking.
In another bowl mix the eggs, lemon zest, and lemon juice until combined.
Pour the egg mixture into the dry mixture and beat until smooth.
Pour into prepared baking dish and spread out evenly.
Bake for 25-30 minutes or until lightly browned and set in the middle. Do not over bake.
Set aside to cool completely.
When the brownies are completely cooled make the glaze by whisking together the powdered sugar and lemon zest and juice. Start with only a little of the lemon juice and add more until the glaze is the right consistency.
Pour glaze over brownies and spread to the edges of the pan. Let brownies sit on counter for a couple of hours so the glaze can set up.
Cut into squares and serve.
Pucker up baby, these are tart and delicious!
