Shoofly Pie

Shoofly Pie ~ The name alone makes me smile :)

This is a pie that I had heard the name over the years growing up but had no clue what went into one. It just always sounded so cute and fun.

For the last month or so I've been in the mood for some good old fashioned southern style desserts, not that I've had a ton, but they always look so delicious and beautiful.

I decided to browse the internet for cookbooks and while on Amazon I bought this cookbook and started reading it to find out what I wanted to make first.

When I read the ingredients for Shoofly pie I KNEW I had to try it.  It has all the warm spices that are synonymous with Molasses Cookies which just happen to be my favorite cookies.

This pie turned out perfect and was so delicious that I'll definitely be making it again.

Here's what you need:

1 single pie crust, either homemade or store bought, blind baked
1 cup flour
2/3 cup light brown sugar, firmly packed
3 Tbs. butter
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1/8 tsp. ginger
1/8 tsp. cloves
1/8 tsp. salt
1/2 cup boiling water
1/2 tsp. baking soda
1/2 cup molasses
1/2 cup light corn syrup
1 tsp. vanilla extract
1 large egg, lightly beaten


Preheat oven to 425 degrees.

Prepare the single crust pie crust and place in pie dish making sure to dock the pie crust (prick with a fork) several times on the bottom and sides.  I use a fluted edge on all my pie crusts but you can use whatever edge you like.  Place a piece of parchment on top of the pie crust and fill with pie weights or dried beans or even dried rice to hold the crust in place and keep it from shrinking.
 
Bake for 10 minutes then remove the parchment with the weights in it, carefully and continue baking 3-5 more minutes until the bottom is cooked.
Remove from oven and reduce the temperature to 350 degrees.

In a bowl mix the flour and the next 7 ingredients until crumbly.  Set aside.
 
Stir together baking soda and boiling water in a large measuring cup or bowl and set aside for 1 minute.

In another large measuring cup or bowl stir together the molasses, corn syrup, vanilla and egg.
Pour the water mixture into the molasses mixture and stir until well combined.
Sprinkle half the crumb mixture into the bottom of the pie crust.  
Pour the molasses mixture evenly over the crumb mixture.
 
Sprinkle remaining crumb mixture evenly over the filling and bake for 40 minutes at 350 degrees.  When the pie is done cooking it will be set in the middle and not wiggly.
Remove from oven and cool on a wire rack until completely cooled, about 2 hours.
Slice and serve with ice cream or fresh whipped cream.
Mmm mmm.  This pie was amazing!
