Lunch is by far my favorite meal of the day.
I love salads, sandwiches, burgers, and even soup for lunch. And now with 2-4 people here most days at lunchtime I love to come up with new ideas for us to try.
These Meatball subs were on my list for awhile now because I already had a great meatball recipe and knew they'd be great as a sandwich.
The best part of this recipe is the meatball recipe makes about 32 meatballs so this is a cook once eat twice recipe for lunch and again for dinner another night. Or you could freeze 1/2 the mixture to make meatballs another time.
How ever you end up making this sub just make it for sure! You can thank me later :)
Here's what you need:
1 recipe Parmesan Meatballs, minus the Parmesan for rolling in, you won't be doing this step.
1 jar (24 oz approx) marinara sauce
1 tsp. Italian seasoning
1/2 tsp. garlic powder
1/4 tsp. onion powder
Sandwich rolls, as many as you need
1 - 2 cups Italian Blend pre-shredded cheese
In a large bowl mix the meatball mixture according to the directions.
Roll mixture into 2" balls and place in a skillet heated over medium to medium-high heat.
They will take about 10-15 minutes to cook all the way through and on all sides.
You can either premix the sauce with the herbs or just pour the sauce over the meatballs and add the Italian seasoning, garlic, and onion powders and stir to combine.
Simmer for about 5 minutes. Pre-heat oven to 375 degrees and line a baking sheet with parchment paper. Place the rolls on the baking sheet and fill with 3-4 meatballs each and spoon some sauce over the top.
Sprinkle with cheese (as much as you like) and place in the oven to toast the roll and melt the cheese, about 5-7 minutes.
Mmm mmm these are so delicious! You'll make them again and again.Serves - a lot of meatballs and many sandwiches ~ Perfect for a crowd of hungry teens or adults!
