Waldorf Salad is something I remember having when I was growing up.
We used to go to hotels like the Hyatt Regency for Brunch on the weekends or Mother's Day and I always remember seeing this on the buffet.
I also remember my husbands Grandmother making this when we were first married and it was delicious.
I love a cold salad and this one is perfect for those Spring gatherings coming up and also great for Summer barbecues and get togethers.
If you haven't had Waldorf Salad before or just haven't had it in a long time like me, give this one a try. I know you'll love it!
Here's what you need:
2 large apples, diced, I used Fuji
2 celery stalks, diced
1 cup red grapes, cut in half, measured before cutting
juice of half a lemon, squeezed on fruit
1/2 cup pecans, roughly chopped
Dressing
1/2 cup mayonnaise, Best Foods or Hellmann's only
1/2 cup plain Greek yogurt, I use Fage
1/4 cup light sour cream
2-3 Tbs. honey
1/2 tsp. salt
pinch of fresh ground pepper
Chop all the apples, celery and grapes and add them to a large bowl. Juice half a lemon over the fruit and stir to coat.
In a medium bowl mix the dressing ingredients until combined. Pour over the fruit and stir to coat.
Add the pecans and stir until combined.
Refrigerate for at least 3 hours before serving.
Great with barbecues and pot lucks.

Waldorf salad makes me think of a picnic. My mom made it all the time. So nice and crunchy. Thanks for sharing.
