I have a serious love of Peanut Butter and Jelly everything.
I love peanut butter and jelly sandwiches, Peanut Butter and Jelly Thumbprint Cookies, and now these delicious Peanut Butter and Jelly Bars.
I've made these several times and they are easy and delicious. Make some today and you're family and friends will thank you!
Here's what you need:
Peanut Butter Base / Topping
1/2 cup butter, at room temperature
1/2 cup Crisco, butter flavored
1 cup creamy peanut butter
1 cup brown sugar
1 cup sugar
2 eggs, at room temperature
2-1/2 cup flour
1 tsp. baking soda
Filling
1 12 - 16 oz jar of your favorite jam, I use my Homemade Strawberry Jam or my other favorite, raspberry (seedless of course)
Preheat oven to 350 degrees and spray a 9 x 13 baking dish with cooking spray.
In a mixing bowl or stand mixer beat the butter, shortening and sugars until light and fluffy, about 2-3 minutes.
Add the peanut butter and mix well, scraping down the sides as you go.
Next add the eggs and mix well.
Add the flour and baking soda and mix until just combined.
In the bottom of the baking dish press 2/3 of the dough and spread out evenly. I usually place a piece of parchment on the dough and press out.
Spread the jam on top of the bottom layer then drop the remaining dough in dollops to cover the top. It's okay to see some of the jam peeking through.
Bake for 45-55 minutes or until golden and puffy.
Let cool in pan for 30 - 60 minutes before cutting and devouring :)
