Greek Chicken Gyros with Tzatziki Sauce

First let me tell you that I absolutely love Homemade Flat Bread.

When it's hot off the griddle it's like a warm blanket for your tummy.

Flat bread reminds me of a cross between pizza dough and a tortilla.

And what goes better with flat bread than Mediterranean flavored chicken.

So once I perfected my flat bread I decided to make up a batch of Greek Chicken so I could make some Gyros.

Gyros are the Mediterranean version of a fajita (to me at least) all warm and soft bread filled with delicious hot chicken and topped with cool toppings for the perfect pairing.  You'll definitely want to make a batch of these soon.


Here's what you need:

1 recipe for Homemade Flat Bread (or store bought), warmed

Chicken Marinade

1-1/2 pounds chicken tenders, boneless and skinless
1/4 cup Greek yogurt, I use 2%
1/4 cup olive oil
juice of 1 lemon (about 2-3 Tablespoons)
2 tsp. apple cider vinegar
1/4 red onion, diced
2 cloves of garlic, micro planed
1 Tbs. oregano
1 tsp. thyme
1/2 tsp. coriander
1 tsp. salt
fresh ground pepper


Tzatziki Sauce

1 English cucumber
1 tsp. salt
1-1/4 cup Greek yogurt, plain ( I use 2% but nonfat would work too)
1 glove garlic, micro planed
juice of 1 lemon
1 tsp. apple cider vinegar
2 Tbs. olive oil
1 Tbs. fresh parsley, minced
1 Tbs. fresh dill, minced
salt and pepper to taste

Toppings:
chopped lettuce
diced tomato
diced red onion
diced feta cheese

To make the Tzatziki sauce I peeled, seeded and minced 1 English cucumber then placed in a mesh strainer with 1 tsp. salt (toss to coat) over a bowl for 30 minutes to draw out some of the water.
Rinse the cucumber under cold water then pat dry.  

In a bowl combine the Tzatziki ingredients and add the cucumber and stir to combine.
 
Place in the fridge and chill for the time the chicken marinates.

Place chicken tenders into a zip top bag.

In a bowl mix the marinade for the chicken and pour over the chicken in the bag and zip is closed taking as much air out as possible.
 
Massage the marinade into the chicken through the bag so all pieces are well coated.  Refrigerate 4 hours. 
Bring the chicken out of the fridge 30 minutes before grilling to come up to room temperature. 
Using a grill pan on medium high, that is well oiled, cook tenders for 3-5 minutes per side depending on size or until completely cooked through. 
 

Pieces of chicken tenders might need to be sliced in half lengthwise if too thick.

To assemble lay a few pieces of the chicken in the flat bread then top with your favorite toppings.  I used lettuce, tomato, red onion, feta and Tzatziki sauce. (If the Tzatziki is too strong for little ones ranch dressing works too)
 
This was the most flavorful chicken I have ever had.  I will definitely be making these again.
