Nana's Banana Bread

Because of the rain today I started out by making my daughters favorite Banana Bread.  Now the story that goes with the recipe is just as good as the banana bread itself.  About two Christmas's ago my Mother-in-law Norma, who the kids have always called Nana, gave everyone the most delicious Banana Bread with their gifts.  So as normal when I really (and I mean REALLY) like a recipe, I asked for a copy.  Norma told me that she got it out of a magazine as usual because she liked the name "Nana's Banana Bread".  I have been using this recipe ever since and every time Norma is in town and I have it made she remarks on how wonderful the bread is and where did I get the recipe, to which I reply, I got it from YOU. hahaha.  I also have a meatloaf recipe with the same story.  So my many thanks not only for the wonderful woman my mother-in-law is, but for her generosity in sharing her recipes; even if she doesn't use them herself anymore.

Here is what you need:

5 Tbl. butter, softened
1/2 cup sugar
1/2 cup brown sugar
1 egg
2 egg whites
1 tsp. vanilla
1-1/2 cup bananas, mashed
1-3/4 cup flour
1 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt
1/3 cup heavy cream

Preheat oven to 350 degrees.
 Cream together butter and both sugars until fluffy.
 Add egg, egg whites, and vanilla and mix until combined then add the mashed bananas. 
In a bowl mix the flour, baking soda, baking powder, and salt.  Add to the mixture alternating with the heavy cream starting and ending with the flour.  Mix until completely incorporated after each addition. Don't forget to scrape with a spatula down sides and around the bottom, especially if using a stand mixer.
Spray a 9 x 5 glass dish with cooking spray and fill with batter. 
Bake for 1 hour to 1 hr. 15 mins.  May also be put into 4 miniature size pans but reduce the baking time to about 35 - 40 minutes.
Recipe makes 1 -  9 x 5 loaf or 4 miniature loaves.
