Crock Pot Breakfast Casserole

I love my crock pot and have been recipe testing for a few weeks now and this one is a keeper.

Blueberry Lemon Coconut Muffins

There's just something about fresh warm muffins in the morning that makes you feel extra special.

I love a good homemade muffin and am usually on the lookout for new recipes.

The other day I had been looking for the Craisins at Costco when I came across dried blueberries and decided to give them a try.  I usually only use fresh blueberries for muffins.

Pumpkin Pecan Cinnamon Rolls

To me there's nothing better than the smell of yeast bread rising and baking in the house.

Add to that yumminess the flavor of pumpkin and pecans and it smells absolutely heavenly when these babies are baking.

I have found that a good cinnamon roll is rather easy to make.  It just takes time and patience and a great stand mixer to do most of the work!

Pumpkin Streusel Muffins

Here is the second of the delicious pumpkin muffins I have made lately and they are just as yummy as the first recipe.

The difference is that these have a streusel topping where as the others have a cinnamon sugar topping.

They are both perfect for breakfast on a cold Fall morning with a steaming cup of tea or coffee or an ice cold glass of milk.

Cinnamon Sugar Pumpkin Muffins

I am all about Fall right now and all the yummy pumpkin recipes I can create and share.

I have been making quiet a few new yummies and I'm sharing them with you :)

I love a good pumpkin muffin in the morning and these are scrumptious.

I have 2 new recipes that are similar and depending on if you like cinnamon sugar or a streusel topping you can decide which ones to make.  I think they are both amazing.

Pumpkin Craisin Bagels

With Fall in the air you know we're in for an avalanche of pumpkin recipes.

There's just something about pumpkin flavored foods that make it feel like it really is Fall, even if you live where it's still been in the 90's like me!

Beings as I'm a lover of pumpkin I too have been trying out new recipes for the last week or so and have several I'll be posting over the next few weeks.

Cinnamon Raisin Bagels

I decided to try my hand at making homemade bagels a while ago because I was buying them fresh every few days for my family and everything tastes better when homemade, right?

Well they turned out pretty good and I've been making them ever since.

Homemade bread making seems intimidating but it really only takes patience and time.

It isn't any harder than baking cooking, you just need to make sure when you start that you have available the amount of time the whole recipe calls for.

Corned Beef Hash with a Poached Egg

One of my hubby's favorite things to eat is breakfast.

He's one of those people who will order it over other meals if it's on the menu, no matter the time of day.

Me?  I'm more of a lunch person unless I'm really in the mood, then I either cook or we go out for breakfast.

So the other night I made a Corned Beef for dinner with the intention of making the hubby's favorite breakfast food the next day for lunch.

Red Potatoes with Bell Pepper & Onion

A few weeks ago I was visiting my cousins and they were making the most delicious smelling breakfast potatoes and if I hadn't just eaten my own breakfast I would have gladly pulled out a fork and dug in!

So when I got home I decided to make some for my family and they were DEE-lish!

You KNOW how much I LOVE potatoes and I can't pass up a new way of making them to save my life.

I love a variety of foods for breakfast and when I make eggs, bacon, & toast I always have to make some sort of potato.

These are totally my new go-to potato for breakfast!

My 16 year old can easily devour two of these breakfast sandwiches in one sitting!

Cinnamon Sugar Toast

Tonight while I was making the oatmeal I decided to make a favorite from when I was a kid.  I don't know why I don't make it more often, maybe because we are jam and peanut butter on our toast people, or maybe just because I very rarely think of it, but tonight I was in the mood for Cinnamon Sugar Toast, mmmmm.
Here's what you need:

2 slices white bread
3 tsp. butter or margarine
2 tsp. cinnamon sugar - see below


Cinnamon Sugar  (This recipe makes enough for several servings of Cinnamon Sugar Toast)
1/2 cup sugar
2 tsp. cinnamon

Toast bread in toaster then spread with butter and sprinkle with cinnamon sugar.
 

     
Cut and serve.

Serves 1
