Pumpkin Fritters

With all the delicious flavors of Fall going around (especially in my kitchen, lol) I decided to take my Apple Fritters and make them into a pumpkin fritter.

These were a hit in my house and I'm sure your family and friends will love them too.

Make a batch today!


Here's what you need:

2 cups flour
1/2 cup sugar
1/4 tsp. salt
1-1/2 tsp. baking powder
2 tsp. pumpkin pie spice
2 large eggs, at room temperature
3/4 cup solid pack pumpkin
3/4 cup whole milk

2 - 3 cups oil for frying

For rolling in after fried

1 cup sugar
1 Tbs. cinnamon

Mix the cinnamon and sugar for rolling in and set aside.

Heat oil in a deep stockpot to 350 degrees, using a candy thermometer.
Mix the dry ingredients with a whisk then add the wet ingredients.
 
Using a whisk or a hand mixer, mix until completely combined.
 
When the oil is to temperature, VERY CAREFULLY and using two spoons, drop the batter into the oil by scooping into one spoon and using the other to scrape the batter off the end.  
Fry for about 2 minutes per side or until nice and golden brown.  I use my large spider spoon to turn the fritters over. Always test the first one by cutting it open to make sure it is cooked through.
 
Fry in small batches of 2 or 3 only.  It is easier to keep an eye on only a few at a time. Make sure the oil comes back to temperature between batches. 
 
Roll in the cinnamon sugar mixture as soon as they come out of the oil so it will stick.
Best served warm.
