One of my favorite things to make for a crowd is a crescent ring meal.  Crescent rolls make food fun and delicious!

They are super easy, feed a ton of people and you can change the size to make them bigger or smaller at any time.

I have several on my blog that are delicious as a lunch or dinner.

Garlic, Herb, & Cheese stuffed Crescents

I was looking for something new to make as a bread side dish for dinner when I stumbled across this amazingly easy recipe over at Lauren's Latest blog.

She has a great assortment of delicious recipes and this one was perfect for what I needed.

I am always looking for new an inventive ways to serve my family some sort of bread at dinner; whether they need it or not, lol. And I knew as soon as I read the ingredients this one was perfect for my bread and cheese loving family :)

I decided to try them after school and the kids gobbled them up so fast that I ended up making a second batch for dinner!

Spicy Taco Crescents

When we get to our place in the mountains we spend a lot of time with my cousins and we tend to eat a lot of our meals together and watch sports or go exploring together.

During football season we get together and watch the football games and always have something yummy to snack on.

This last season was no different and my cousin Elena came up with these wonderful appetizers that I have made several times since.

These are perfect for an after school snack or weekend nibble after a big breakfast.

Berry Cheesy Crescents

A couple of weeks ago I went to Bingo with some friends...No I didn't win...Again!

But I did come away with an idea for a new treat.  Thanks to Becca for the inspiration for these delicious crescents.  And really, what could be better than crescent rolls filled with cream cheese and fruit?

This is a super simple and fast recipe and if you're like me you will likely have all the ingredients on hand at any given time.

Cheesy Bacon Pinwheels & SRS

I have signed up for a really fun new Swap.  Surprise Recipe Swap is hosted by Jutta over at Hungry Little Girl blog.  Jutta and I are friends on Facebook and have also been following each other's blogs for a while now so when she asked me if I wanted to participate in a monthly "Surprise" recipe swap I said "sign me up!"

This month I was assigned Hun, What's For Dinner? which is written by Cindy, a SAHM of two beautiful children and has a husband who is a Chef.  She loves to cook and bake and reviews cookbooks and products geared towards cooking.

I have been following Cindy on Facebook for a while now so I was very excited to get her blog as my secret swap this month.  I even printed out three different recipes because everything looks so delicious on her blog.

I chose her Bacon Cheddar Pinwheels recipe (which I adapted slightly) because we will likely be having a Superbowl party at our house this year and I wanted some new appetizers to serve.  This was right up my alley because it was super easy, fast to prepare, and has all the right ingredients ~ bacon, cheese, bread (crescents) and dip!

Mini "Cheater" Cinnamon Rolls

Last week I found this recipe over at Sally's Baking Addiction and adjusted it slightly for my family.  If you haven't yet visited Sally's blog you NEED to go over there now; and tell her I sent you.  But be warned, you might need a bib for all the drooling you'll be doing over the amazing recipes Sally has posted on her blog.

I love a good cheater recipe and this was a total hit in our house.  Now, I can make tradition cinnamon rolls but I don't always have the forethought to get up a couple hours earlier then everyone else in the house to make them from scratch.  So when I found this recipe, I actually went downstairs and tried them immediately.  They were DELICIOUS!  I will be making these again and again for my loved ones.

Here's what you need:
1 - 8 oz. can crescent roll dough - the fresher the better
2 Tbs. butter, at room temperature
1/3 - 1/2 cup sugar
1 Tbs. cinnamon

Icing
1/2 cup powdered sugar
1/2 tsp. vanilla
2 - 4 tsp. milk

Preheat oven to 350 degrees.  Spray mini muffin tins with cooking spray and set aside (I got 20 mini rolls)
In a small bowl mix the sugar and cinnamon and set aside.
 
Roll out half of the dough (4 triangles) on a piece of parchment (for easier clean up) and pinch the seams together then flip over and pinch the same seams together on the other side.  Using a rolling pin, roll the dough into a triangle a little bigger than the original size (about 1-1/2 times as big) and 1/4" thick.
Spread half the butter on the dough and sprinkle with the cinnamon sugar mixture until well coated, (half the mixture) pressing lightly so the mixture really sticks to the butter.
 
Starting with the wide side roll the dough up tightly and cut into 8 - 10 equal pieces. Placing each piece on it's side in the prepared mini muffin tins as you go.  
Repeat with the second half of the dough.
Bake for 12 - 14 minutes or until lightly golden brown.
Remove from pan as soon as they are done and place on a cooling rack (I used a spoon to "scoop" the rolls out of each tin).  While the cinnamon rolls are cooling make the icing.

Place the powdered sugar in a bowl and add the vanilla and start with 2 tsp. milk.  Whisk the icing adding 1 tsp. of milk at a time until the desired consistency is achieved.
 
Using a spoon drizzle the icing over the rolls while still warm.
Devour as fast as you can!  Then make more :)

Serves - 20 mini rolls

Chicken Enchilada Ring

Today for lunch I decided to make my son Justin's favorite Pampered Chef meal.  Now, some of you might already have seen this recipe before and are going "Hey" that's not the recipe I have, but I do this quite often.  I changed the recipe to fit my life which is what I personally think we all should do.  So here is my version of the Chicken Enchilada Ring.

Here's what you need:

2 chicken breasts boiled and chopped (or as you can see like I used) 2 large cans white meat chicken, drained
1 4oz can sliced olives
1 4 oz can green chilies
2 cups colby jack or 1 cup each cheddar and monterey jack cheese
1/2 cup mayonnaise
1 Tbl. southwestern seasoning (Pampered chef)
1 cup crushed tortilla chips
1 lime, juiced
2 packages crescent rolls
salsa, sour cream, guacamole optional for serving



Preheat oven to 375 degrees.
Drain the chicken.  Measure all the ingredients and put in a medium bowl.  Now the fun part...
Place some tortilla chips in a resealable plastic bag and roll the days aggression's out of them with a rolling pin.... You will need 1 cup total crushed chips.  Add 3/4 cup to the mixture and reserve the rest.
 

Mix until well combined.  Set aside.
On a round baking stone or a large baking sheet, lined with parchment, pour the remaining crushed chips in a circle with about a 6" opening in the center.
Lay the crescent roll pieces in a pretty sunflower design; or just a plain ol' circle and smush (I love that word) together the inside edges and press the pieces into the chips.
Using a large scoop; or the best tools God gave us, clean hands, fill the ring right next to the inside edge all the way around evenly.
Fold up and over the filling all the crescent pieces and tuck under the inside edge.  Press any remaining chips into the top of the crescents.
Bake for 20 - 25 minutes or until golden brown.  Great served with sour cream, salsa, and guacamole.
And this is what it looks like when done.....
